Who doesn’t love an easy-peasy super crunchy chocolate dessert which you can make last minute? This chocolate cornflake bark is so easy to put together, super crunchy and absolutely indulgent. You won’t be able to stop yourself from having this bark. I feel it’s one of those recipes which you can make on all occasions given how quickly it comes together. Feel free to make your own version of this by swapping cornflakes with your favourite breakfast cereal. Let’s get to the ingredients needed to make this chocolate cornflake bark.

INGREDIENTS NEEDED TO MAKE CHOCOLATE CORNFLAKE BARK

PEANUT BUTTER

To make my chocolate cornflake bark I have used crunchy peanut butter. Feel free to use a creamy peanut butter if you have that at home. Or you can even take it up a notch by folding roasted and finely chopped peanuts into your creamy peanut butter before using for this recipe. I have used this peanut butter for my chocolate cornflake bark.

BUTTER

I have used this salted butter for this chocolate cornflake bark. Feel free to use unsalted if that’s what you have in hand. Make sure you add a pinch of salt in case you are using unsalted butter.

CORNFLAKES

For my chocolate cornflake bark I have used regular cornflake, this one. But like I mentioned above, feel free to use whatever cereal you love and have at hand. Make sure you don’t use a very strongly flavoured cereal which do not pair well with the dark chocolate that we are using in the recipe.

DARK CHOCOLATE

I have used this dark chocolate for that chocolatey goodness in this chocolate cornflake bark. Feel free to use milk chocolate in place of dark if that’s your game. I have used a compound chocolate to make my bark as it doesn’t need to be tempered before setting again. Feel free to use coverture chocolate if you can temper it before using.

PROCESS TO MAKE CHOCOLATE CORNFLAKE BARK

To start with, line a 9-inch pan with parchment paper. I am using a rectangular pan. Keep it aside. Now in a pan set over medium heat, add your crunchy peanut butter along with regular salted butter. Let the two melt together and mix well. Once melted, add the cornflakes and turn off the heat. Coat the cornflakes really well with the peanut butter-salted butter mix completely. Now on your line pan, spread a very thin layer of melted dark chocolate. Onto that, add this peanut butter-cornflake mixture and spread out evenly. Lastly, top it with a thick layer of melted dark chocolate. Spread that evenly and let it set in the fridge for 15-20 minutes. Voila! Your crunchy chocolate cornflake bark is ready.

EQUIPMENT USED FOR MAKING CHOCOLATE CORNFLAKE BARK

The kind of equipment you use when you’re baking makes a huge difference to the end result! I would recommend you to use good quality mixing bowls and other equipment so that your chocolate cornflake bark comes out delicious!

Not a single day goes in my kitchen when I don’t use a Silicon Spatula, this is the one I recommend. Same goes for my set of Measuring Cups and Measuring Spoons.

The pan that I have used to melt my peanut butter and salted butter is this one. It’s one of my most used and favourite pans of all time.

The induction which has been a part of my kitchen for a really long time is this one, I absolutely love it. It makes my cooking so much easier and hassle free.

The rectangular pan that I used to set my bark is not available online but this one is the most similar one I could find.

The brown parchment paper I use in my kitchen is this one.

To melt my chocolate, I’m using Borosil’s 100% Borosilicate Glass Bowl which is microwave and oven safe, plus the bowls are super easy to clean and handle, which makes my baking process totally hassle free!

Ingredients
  • ½ cup peanut butter
  • 1 tbsp butter
  • 2½ cup cornflakes
  • 400 gm dark chocolate, melted
Instructions
  1. Start by lining a 9-inch pan with parchment paper.
  2. In a pan set over medium heat, add peanut butter and salted butter.
  3. Melt the two together.
  4. Add cornflakes and coat them evenly.
  5. On the lined tray, spread a thin layer of dark chocolate,
  6. On to it, spread the cornflake mix evenly.
  7. Top it with rest of the melted chocolate.
  8. Freeze for 10-15 minutes and enjoy!
