FUDGY CHOCOLATE BROWNIES ( WITH AN EGGLESS OPTION)

Everyone loves chocolate brownies- they’re comforting, delicious and well, chocolaty! These fudgy chocolate brownies are you chocolate dreams come true. The fudgy texture of these brownies, the flaky layer on top and the rich intense flavor make this recipe a total winner. It is an absolutely no-fuss recipe that is very simple to make.

Over time, these fudgy chocolate brownies have become a favorite among my lovely people on Instagram and is probably the most re-created recipe from the blog. I get emails and messages from my readers every day who make these fudgy chocolate brownies at home and share images with me. While I make these brownies with egg, I also share a substitute for it in the recipe below. YES! You can now make eggless fudgy chocolate brownies using this recipe and they’re equally delicious. Just keep two things in mind- use the best quality chocolate that you can get your hands on. That makes all the difference. Also, once your brownies are baking, let them cool completely before you try and slice them. They’ll crumble very easily when they’re still hot.

These fudgy chocolate brownies are you chocolate dreams come true. The fudgy texture of these brownies, the flaky layer on top and the rich intense flavor make this recipe a total winner. It is an absolutely no-fuss recipe that is very simple to make.
Ingredients
  • 1 cup ( 175gm) dark chocolate, coarsely chopped
  • ½ cup (113gm) butter
  • 1 cup (200gm) caster sugar
  • ½ cup (60gm) all purpose flour
  • 1 tsp (4gm) baking powder
  • 3 tbsp ( 23gm) cocoa powder
  • 2 eggs or 1 cup (285gm) Greek yogurt
  • ½ cup (63gm) crushed walnuts
Instructions
  1. Butter an 8" square pan and pre-heat your oven to 180C.
  2. In a saucepan set over low heat, melt butter and chocolate. Let it cool.
  3. Combine sugar and eggs ( or Greek yogurt). Add the cooled chocolate mixture.
  4. Add in the flour, cocoa powder and baking powder. Fold in the walnuts
  5. Transfer the batter to the baking dish.
  6. Bake at 180C for 30 minutes-35 minutes. Let the brownies cool completely before you try and cut them.

          Hi Shivesh, this receipe is amazing. I’ve tried it without eggs (so used Greek yoghurt) and tried gluten free flour instead of normal flour. I’ve let it cool down for ages but find that they are still soft so crumble really easily. Any tips?

            Lack of gluten makes them crumbly. Unless you add gluten powder along with these flours, it should help. But then again it wont solve the prupose of being gluten free 😛

      Hi Rekha!

      I’m so happy to hear that. If you try and cut the browies right after they’re out of the oven they will break. Let them sit in the fridge for a while. Once the butter in them becomes firm, you’ll be able to cut them without breaking

    Which chocolate did you use?
    My brownies always turn out unbearably sweet because the chocolate I use also has some sugar in it and with the amount of sugar mentioned in the recipes I’ve tried have always lead to an overload of sugar.

      It’s different for each ingredient. If you’re looking for measurements in grams, you will have to google for each ingredient

      Hey Anshika. Mix until they’re well combined. Should not take more than 2-3 minutes using an electric mixer

      Yes. You can hand the normal yoghurt in a cloth overnight so that water dripps out. That will work as greek yogurt.

        I used compound chocolate to make the brownies and the browny was a disaster ? the brownies were extremely sweet plus it was way to liquidy it didn’t bake even after40 mins..after 40 mins i took out from oven kept it out side to cool for roughly half an hour the butter was all coming out from my mould ..the recipe was good but the compound chocolate which I used made the recipe disaster;((

      Hi Nikita! thank you so much. The trick is to let the brownies cool completely before cutting into them. You can also refrigerate them for a while if you think they are very soft. When the brownies are hot, the butter is not firm and thus the brownies are crumbly. You can let the butter chill and become firm- it will be very easy to cut the brownies then. 😀

        Hi Shivesh,

        I did try this recipe with combination of milk and dark couverture chocolate + Greek yogurt (epigamia). Brownie were absolutely fudgy however, even I felt sour or tangy aftertaste in these brownies. It is because of the high amount of yogurt being used in this recipe.

    This recipe is AMAZINGGG!! Works perfectly and absolutely love the texture! Also because I used Lindt dark cooking chocolate which makes it de-licious. The only issue for me- is that it is a little small! So if I were to double the recipe what size pan to use and bake for how long to get the right thickness and consistency?

    Hey!! I just made this recipe (the eggless version) but unfortunately it was a disaster as it came out of the oven soaked in oil (I swear I used the real deal Greek yogurt)…
    But I know it’s not the recipie to blame because the last chocolate cake I made also turned out the same… And since then this is the first cake I’m baking because it seemed soooooo good.. I have no idea why it keeps turning out this way… And google says not to let the butter get too soft( not relevant when I’m melting it anyway right?) What do I do??!! (The batter was super delicious though) and sorry for the long post

      Hey! it could be because you don’t cream your butter and sugar very well. Seems like your butter doesn’t get incorporated into the batter properly.

    Hey… I dunno if this comment is gonna get posted a second time… But I made this recipe but for some reason it turned out pretty greasy and oily.. like the grease was sweeping through after it was baked.. I tried the eggless version( used Greek yogurt and not home made one I promise) and I know this has to be some technical error on my part… I dunno why it’s happening ( it’s the second time and the first one was with a different recipie… ) And I looked it up online and they say don’t let the butter get too soft.. but this recipe (and the previous one) called for melted butter. What should I take care of while baking?

    Thank you so much for this hassle free receipe. It turned out to be superb. Kids were glued to the oven while it was baking. I opted for the egg version if the receipe. The crust turned out to be a bit flaky but it was because of the temperature issues of my oven.

    hey shivesh.. which brand of cocoa powder did u used? can i used the cadbury one? also can homemade caster sugar be used?

      Hello! I use Hershey’s but Cadbury’s is great too. Yes you can use homemade castor sugar

    I have a small doubt. For baking these brownies should we have only the lower heating ON in the OTG or turn on both upper and lower heating rods with the convection fan on while keeping the baking tin in the center ?

      Hi Shivesh, I have tried few easy recipes of yours in past couple months, like chocolate fudge and it turned out great, loved them!

      I have few Queries for this recipe.

      1) how long I need to preheat OTG and at what temperature?

      2) as trying this recipe in lockdown, I don’t have access to good dark chocolate. Instead can I use dairy milk Silk/similar?

      3) will glass square pan work in oven? I use that pan in Microwave.

    Hi Shivesh,
    I really enjoy your posts and your passion in explaining the sceince behind your baking. I am a novice baker and like to research and understand the recipe before baking. .

    I generally see that to avoid cakey brownies, it is recommened to use baking soda. Since the baking soda can react with the yogurt, cocoa(natural, not dutch) and brown suagr which are all acidic to give that leavening effect.

    So what is the science behind using baking powder instead of baking soda in this recipe?

    Also, you have suggested 1 cup of yogurt to replace 2 eggs. 1 egg = 1/4 cup yogurt,so is there a specic reason for adding more yogurt here?

    Hi Shivesh,..this brownie was an absolute hit with my family. Each one of them devoured them. I made them eggless and without castor sugar as I couldn`t source it but nevertheless they were heavenly. Thank you for sharing such an amazing recipe. Am trying your Banana Marble Cake recipe next.

    Hey, what can we use instead of parchment paper when it comes to baking these brownies? Google says aluminium foil is a good replacement, but it might bake sooner. What do you say? Have you experimented with that?

    Hi,
    I have tried this recipe twice.
    1st time I tried using Greek yogurt and 2 nd time I tired using hung curd.. rest everything I have used exactly as per your recipe…it smells good and looks also good but both the times my brownie tastes quite sour (khatta)..basically not edible..
    Can you please suggest what can be done?…I have been following you since a long time…hope you will reply

    Hello! In your post “BROWNIE FAILS AND HOW TO FIX THEM” you mention that fudgy brownies require brown sugar. This recipe doesn’t have brown sugar. What would the proportion be if we use brown sugar? Thanks!

    Hey, I tried the yoghurt version of this recipe .
    Unfortunately it turned out really bad. The mixture was loose .
    I kept it in the oven for more than an hour but the texture wasn’t good.

    Hi! I tried this recipe for an eggless brownie. Unfortunately the brownie was unstable. Since I referred to the measurements in grams, i used a weighing scale. By the end of 30 minutes, all the butter welled up leaving the brownie porous. I have a doubt with regard to the quantity of all purpose flour that you’ve used. Since you’ve mentioned ½ cup, shouldn’t that be equal to 120g approximately? I used 60g as mentioned by you, but it didn’t turn out well.

    Hi

    Tried my hands on the eggless recipe, the brownie baked perfectly while in the oven.

    However when the whole brownie slab cooled down and went on to cutting it into pieces, it was completely crumbled and dry. I could barely cut a perfect square.

    It tasted amazing however was very dry and crumbly.

    Can you advise what could have gone wrong.

    used this exact recipe 3 times already and everytime the end result is me eating the whole batch.
    instead of folding in the walnuts i top the batter with them so in the end walnuts ends up on a crisper side and add crunch.
    Gonna try the chikki-brownie now

    Hi shivesh, I tried your brownie recipe. But it was undercooked. I kept for 35 – 40 minutes in the microwave. I used Greek yoghurt but it was not very thick like your hung curd. Also in the video you said to put vanilla extract but it’s not mentioned how much. I use Cadbury Bournville dark chocolate. Plzz suggest how to go about as your recipe looked very tempting and my kid was waiting for ur brownie.

    Hi Shivesh,

    I did try this recipe with combination of milk and dark couverture chocolate + Greek yogurt (epigamia). Brownie were absolutely fudgy however, even I felt sour or tangy aftertaste in these brownies. It is because of the high amount of yogurt being used in this recipe.
