Double chocolate with cocoa and chocolate chips, it’s the perfect fix for a rather gloomy day. And the best part? It comes together in a total of 5 minutes from scratch to first bite. I know you are going to love it as much as I did! Let’s discuss the ingredients we will need for this deliciously decadent mug cake.
INGREDIENTS NEEDED FOR DOUBLE CHOCOLATE BANANA MUG CAKE
As the name tells, it’s a double chocolate banana mug cake. You need one regular sized banana which is to be mashed before adding to the mug. A few things that you should keep in mind while choosing the correct banana is a) it’s ripeness and b) it’s size. If you see that your banana is not ripe enough, do not fret, you can make your banana ripe by baking it at 150C in the oven until the peel turns blackish. While baking, it might start leaving its juices and bubble up a bit, that’s absolutely okay. Make sure that you let it cool a bit before pealing and mashing. Now on to the size of the banana. Just a regular banana which when mashed makes less than or equal to ½ cup. Not more than that.
To replace eggs in this recipe, the best substitute is yogurt or homemade dahi. I don’t particularly enjoy mug cakes that have eggs because of that eggy after taste. No amount of vanilla suffices that unpleasant smell of eggs. When replaced with dahi, you get the perfect tender moist crumb which is achieved with eggs. In this mug cake, you can either use regular homemade dahi (do not hang and remove water from it) or store brought yogurt. Both of them works well.
A regular flavourless oil is your best bet while baking. Any other oil usually leaves an after taste which you do not want in your dessert. I have used olive oil with chocolate in a chocolate cake recipe and it didn’t leave any after taste so if you would want to give it try, you sure can in this recipe of double chocolate banana mug cake.
I usually prefer castor sugar in all my recipe until mentioned otherwise. Castor sugar melts evenly unlike granulated sugar. If you don’t have castor sugar in hand, feel free to substitute it with powdered sugar in this double chocolate banana mug cake.
ALL PURPOSE FLOUR
I have used regular maida in this double chocolate banana mug cake. Feel free to swap it for whole wheat flour or oat flour. Make sure you increase the quantity of dahi in that case as these flour absorb more liquid in a recipe.
I have used unsweetened cocoa powder in this mug cake. Feel free to use which ever you have at home. If you don’t want to give this mug cake a double chocolate flavour, you can also replace cocoa powder with equal quantity of maida and just add chocolate chips for that chocolatey goodness.
BAKING POWDER AND BAKING SODA
I have used both baking powder and soda in this double chocolate banana mug cake. Baking soda will react with the yogurt or homemade dahi and baking powder would react to the rest of the liquid in the recipe.
Lastly, for that chocolatey goodness I have used dark chocolate chips. Feel free to use milk chocolate chips in place of dark if that’s your game. I loved the double chocolatey flavour in this double chocolate banana mug cake.
PROCESS TO MAKE DOUBLE CHOCOLATE BANANA MUG CAKE
The procedure to make this double chocolate banana mug cake is super easy. Like all my mug cakes, take a large mug and add mashed banana, homemade dahi and oil to it. Give it a good mix. Time to add the dry ingredients. Start by adding castor sugar along with all purpose flour, cocoa flour, baking powder and baking soda. Make sure everything is well combined. Lastly, add chocolate chips and microwave it for 2 mins at regular setting. Let it cool for a minute or two before digging in. I like to top mine with some vanilla icecream. It sure takes it a level up.
