6 min eggless banana cake in microwave

A one bowl, super comforting, wholesome, soft and fluffy eggless banana cake which is ready in just 6 minutes is all that you need this weekend. No fuss recipes are best recipes. Am I right or am I right? Bananas have always been my soul food. And when paired with a little cinnamon and a lot of chocolate in this eggless banana cake, it became just the right dessert for my soul. I love a big scoop of vanilla icecream to go with my banana cake. The icecream just takes the cake up a notch, try it for yourself if you haven’t yet! Let’s get to the ingredients you need for this easiest softest banana cake.

INGREDIENTS NEEDED FOR EGGLESS BANANA CAKE

BANANA

As the name tells, it’s an banana cake. You need two regular sized banana which is to be mashed before adding. A few things that you should keep in mind while choosing the correct banana is a) it’s ripeness and b) it’s size. If you see that your banana is not ripe enough, do not fret, you can make your banana ripe by baking it at 150C in the oven until the peel turns blackish. While baking, it might start leaving its juices and bubble up a bit, that’s absolutely okay. Make sure that you let it cool a bit before pealing and mashing. Now on to the size of the banana. Just a regular banana which when mashed makes less than or equal to ½ cup. Not more than that. Here I used 1 cup of mashed bananas.

YOGURT

To replace eggs in this recipe, the best substitute is yogurt or homemade dahi. When eggs are replaced with dahi, you get the perfect tender moist crumb which is achieved with eggs. In this eggless banana cake, you can either use regular homemade dahi (do not hang and remove water from it) or store brought yogurt. Both of them works well.

OIL

A regular flavourless oil is your best bet while baking. Any other oil usually leaves an after taste which you do not want in your dessert. I have used olive oil with chocolate in a chocolate cake recipe and it didn’t leave any after taste so if you would want to give it try, you sure can in this recipe of eggless banana cake.

CASTOR SUGAR

I usually prefer castor sugar in all my recipe until mentioned otherwise. Castor sugar melts evenly unlike granulated sugar. If you don’t have castor sugar in hand, feel free to substitute it with powdered sugar in this eggless banana cake.

VANILLA EXTRACT

Using the best kind of vanilla has always made all the difference in any dessert. Please avoid using vanilla essence as it is not real but synthetic and chemically made vanilla flavour. Make sure you use good quality vanilla extract or bean for this banana cake. I recommend this one. ALL PURPOSE FLOUR

I have used regular maida in this eggless banana cake. Feel free to swap it for whole wheat flour or oat flour. Make sure you increase the quantity of dahi in that case as these flour absorb more liquid in a recipe.

BAKING POWDER AND BAKING SODA

I have used both baking powder and soda in this eggless banana cake. Baking soda will react with the yogurt or homemade dahi and baking powder would react to the rest of the liquid in the recipe.

CINNAMON POWDER

I love flavour of cinnamon in my desserts. It definitely takes everything a level up. And when paired with banana and walnuts in this super moist and delicious eggless banana cake, you are going to love it because I did too!

CHOCOLATE CHIPS

Lastly, for that chocolatey goodness I have used dark chocolate chips. Feel free to use milk chocolate chips in place of dark if that’s your game. I loved the dark chocolatey flavour in this eggless banana cake.

CRUSHED WALNUTS

Everytime I make banana bread, I love a bit of crunch in it. Walnuts, almonds, hazelnuts, pecans any nut you can use of your choice in this eggless banana cake.

PROCESS TO MAKE EGGLESS BANANA CAKE

The procedure to make this banana cake is super easy. Take a large bowl and add mashed banana, homemade dahi, oil, castor sugar and vanilla to it. Give it a good mix. Time to add the dry ingredients. Start by adding all purpose flour, cinnamon powder, baking powder and baking soda. Make sure everything is well combined. Lastly, add chocolate chips and crushed walnuts and microwave it for 6 mins at regular setting. Let it cool for a minute or two before digging in.

TIPS AND TRICKS TO MAKE EGGLESS BANANA CAKE

  1. Make sure you use a ripe banana for this recipe for that extra tenderness and sweetness.
  2. Mash the banana really well so that there are no chunks of banana in the batter.
  3. If you are using homemade dahi, use the thick part. Do not remove water just make sure you don’t take a lot of it.
  4. Make sure your wet ingredients are well combined before adding the dry ingredients.
  5. Make sure your dry ingredients are either sifted before or doesn’t have a lot of lumps.
  6. Do not use a very old baking soda. Make sure it’s fresh and not expired.
  7. Mix the batter really well and only then fold in chocolate chips and walnuts.
  8. Let it cool for a few minutes before digging in.

EQUIPMENT USED FOR MAKING EGGLESS BANANA CAKE IN MICROWAVE

The kind of equipment you use when you’re baking makes a huge difference to the end result! I would recommend you to use good quality mixing bowls and other equipment so that your eggless brownies come out delicious!

To mix all my ingredients together in, I’m using Borosil’s 100% Borosilicate Glass Bowl which is microwave and oven safe, plus the bowls are super easy to clean and handle, which makes my baking process totally hassle free!

Not a single day goes in my kitchen when I don’t use a Silicon Spatula, this is the one I recommend. Same goes for my set of Measuring Cups and Measuring Spoons.

And finally I microwaved my eggless banana cake in this microwave for 6 minute and normal temperature.

Ingredients
  • 1 cup mashed bananas (about 2 bananas)
  • 3 tbsp yogurt or homemade dahi
  • ½ cup oil
  • ¾ cup castor sugar
  • 1 tsp vanilla extract
  • 1 + ½ cup maida
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon powder
  • ¼ cup chocolate chips
  • ¼ cup crushed walnuts
Instructions
  1. Start by mashing your bananas in a bowl.
  2. Add with yogurt, oil, castor sugar and vanilla to the bowl and give it a good mix.
  3. Add maida, cinnamon powder along with both baking powder and baking soda. Mix well.
  4. Lastly tip in chocolate chips and walnuts and microwave for 6 minutes.
  5. Top it with vanilla ice cream if you would like and enjoy!
