I love making brownies be it of any kind. Whether it’s a cheesecake brownie or an oreo brownie or the regular classic dark chocolate brownie. But this brownie is different than all of those decadent brownies. This eggless aata jaggery brownies is so light, considerably healthy than your regular brownies and so delicious at the same time.
Making brownies in microwave for a single person has now become my cheat go to brownies for when I don’t have enough time to bake the whole batch in the oven. Try these quick equally decadent and healthier brownies which comes together in just 10 minutes. Let’s get to the ingredients.
INGREDIENTS USED IN EGGLESS AATA JAGGERY BROWNIE
BUTTER
I have used this salted butter for this eggless aata jaggery brownie. Feel free to use unsalted if that’s what you have in hand. Make sure you add a pinch of salt in case you are using unsalted butter.
CHOCOLATE CHIPS
I have used this dark chocolate chips for that chocolatey goodness in these eggless aata jaggery brownie. Feel free to use milk chocolate chips in place of dark if that’s your game.
JAGGERY
For the sweetener, I have used this jaggery powder as I wanted these brownies to be free from refined sugar. I am very sure, when you serve these delicious brownies to your parents and grandparents, they will be thrilled to know these eggless brownies have jaggery! The flavor of jaggery goes really well with whole wheat flour. If you want you can substitute 50% of jaggery powder with caster sugar or even brown sugar.
YOGURT
To replace eggs in this recipe, the best substitute is yogurt or homemade dahi. When eggs are replaced with dahi, you get the perfect tender moist crumb which is achieved with eggs. In this eggless aata jaggery brownies, you can either use regular homemade dahi (do not hang and remove water from it) or store brought yogurt. Both of them works well.
ESPRESSO SHOT
Coffee always enhances flavor, especially when it is used with chocolate! These brownies go up a notch when I added half an espresso shot. It is simply a tablespoon of hot water when added with 1 teaspoon of this coffee powder. It gives a good, intense flavor to these eggless aata jaggery brownies and even cuts the atta flavor in there. If you want to skip this, you can even add a tablespoon of hot water instead.
WHOLE WHEAT FLOUR OR ATTA
Whole wheat flour is heavier than all-purpose flour which we generally use in baking. It is ironic but how this flour is heavy but when we eat this eggless aata jaggery brownies, we feel light! This flour makes the baked goods dense but when we incorporate air properly, that’s not the case. This flour tends to make things dried out but as we are putting a lot of moisture, it all balances out.
BAKING POWDER AND BAKING SODA
I have used both baking powder and soda in this eggless aata jaggery brownie . Baking soda will react with the yogurt or homemade dahi and baking powder would react to the rest of the liquid in this recipe of eggless aata jaggery brownie. I use this baking powder and this baking soda.
EQUIPMENT USED FOR MAKING EGGLESS BROWNIE
The kind of equipment you use when you’re baking makes a huge difference to the end result! I would recommend you to use good quality mixing bowls and other equipment so that your eggless brownies come out delicious!
To mix all my ingredients together in, I’m using Borosil’s 100% Borosilicate Glass Bowl which is microwave and oven safe, plus the bowls are super easy to clean and handle, which makes my baking process totally hassle free!
Not a single day goes in my kitchen when I don’t use a Silicon Spatula, this is the one I recommend. Same goes for my set of Measuring Cups and Measuring Spoons.
And finally, to bake my brownies I have used a microwave safe square glass bowl, this one is quite similar to the one I have used.

OTHER BROWNIE RECIPES FROM THE BLOG
- 2 tbsp salted butter
- ¾ cup dark chocolate chips
- ¼ cup jaggery powder
- ¼ cup yogurt
- 1 tbsp water
- 1 tsp coffee powder
- ⅓ cup whole wheat flour
- ½ tsp baking powder
- ⅛ tsp baking soda
- Dark and milk chocolate chips to top
- In a bowl, melt chocolate and salted butter, until they are combined together and set this side.
- In another bowl, take yogurt and jaggery powder and give them a good mix, till almost all the jaggery powder dissolves.
- Add espresso shot and vanilla extract into it and give it a good mix.
- Add the chocolate and butter mixture into this and give it a mix, till all the ingredients are combined.
- Sift in the whole wheat flour, baking powder and baking soda and give it a mix, till there are no large flour pockets.
- Pour the batter into a microwave safe bowl and top it up with some milk and dark chocolate chips.
- Microwave it at regular heating mode for 2 minutes or until a film on top is formed indicating it’s cooked from inside.
