LYCHEE ICED TEA WITH COCONUT JELLY

For me, summer isn’t complete without a tall glass of lychee iced tea. This drink isn’t just a thirst-quencher; it’s a sensory escape. This exquisite drink blends the delicate sweetness of lychee with the brisk, refreshing notes of chilled tea. The first sip is a tantalizing dance of flavors, where the tropical essence of lychee meets the subtle bitterness of tea, creating a perfect harmony.
Served over ice, it’s a crystal-clear reminder of the season, offering a cool, soothing respite from the heat. Each glass is not just a drink but an experience—crisp, rejuvenating, and utterly delightful, making every moment of summer just a little bit more magical.

INGREDIENTS USED IN LYCHEE ICED TEA WITH COCONUT JELLY

  • LYCHEE

Lychee is used in lychee iced tea primarily for its unique, sweet, and floral flavor. It is typically added in the form of lychee juice or syrup, which is mixed with brewed tea to infuse the beverage with the distinct taste of lychee. Additionally, lychee pieces can be used as a garnish to enhance both the presentation and flavor of the iced tea.

  • SUGAR SYRUP

Sugar syrup is used in lychee iced tea to sweeten the beverage uniformly without leaving any granulated sugar residues. It helps to balance the flavors and enhance the overall taste. I heat equal quantities of sugar and water to make this sugar syrup.

  • COCONUT JELLY

Coconut jelly is used in lychee iced tea to add texture and an extra layer of flavour. The translucent, often colourful pieces of coconut jelly can make the iced tea visually appealing, adding an attractive element to the presentation.

  • BASIL SEEDS

Basil seeds are sometimes used in lychee iced tea to add texture and nutritional benefits. When soaked, basil seeds develop a gel-like outer layer while retaining a slight crunchiness at the center.

  • TEA BAGS

Tea bags are integral to the preparation of lychee iced tea, serving as the foundation for its flavor profile. Steeped in hot water, they infuse the beverage with a rich and aromatic essence, whether it’s the bold notes of black tea or the delicate nuances of green tea. Once brewed and cooled, the tea becomes the canvas upon which the sweetness of lychee and any additional ingredients, like basil seeds, can harmonize. Black tea bags work best but you can also try using jasmine tea bags.

EQUIPMENTS USED IN MAKING LYCHEE ICED TEA WITH COCONUT JELLY

Measuring Cups and Measuring Spoons are the first thing that anybody who in cooking or baking needs. The right quantities will help in the desired outcome so these two things are a must.

A mixing bowl or jar to assemble the drink.

TIPS TO MAKE LYCHEE ICE TEA WITH COCONUT JELLY

  1. Adjust the sweetness to your taste by controlling the amount of sugar or sweeteners added. Consider using a combination of lychee syrup and sugar syrup for added depth of flavor.
  2. Enhance the drink by adding complementary flavors such as coconut jelly, basil seeds, or even a splash of lemon juice for brightness.
  3. Ensure the tea is properly chilled before serving by refrigerating it for a few hours or adding plenty of ice cubes.
  4. Lychee iced tea is best enjoyed fresh. Avoid letting it sit for too long, as the flavors may diminish over time.
LYCHEE ICE TEA WITH COCONUT JELLY

Ingredients
  • 2 cups water, hot
  • 2 black tea bags
  • 1 cup coconut water
  • ½ tsp agar agar
  • ½ tbsp basil seeds (sabja seeds)
  • ¾ water
  • 8 lychees, deseeded
  • 2 tbsp sugar syrup
  • 8 fresh lychee, deseeded
Instructions
  1. Start by brewing tea bags in hot water for at least 5-10 minutes.
  2. For the coconut jelly, add coconut water and agar agar to a heavy-bottomed saucepan. Bring the mixture to a boil, then pour it into a square dish. Let it sit in the refrigerator for at least 10 minutes or until the jelly is set.
  3. ⁠Soak basil seeds (sabja seeds) in water for 5 minutes or until they swell up.
  4. ⁠In a bowl, muddle 8 deseeded lychees with 2 tbsp sugar syrup to release all the flavour and aroma.
  5. Assembly- in a bowl, add 8 deseeded lychees, coconut jelly, muddled lychees, basil seeds, brewed tea and ice. Mix everything together and enjoy.
