SUGAR SYRUP
Sugar syrup is used in lychee iced tea to sweeten the beverage uniformly without leaving any granulated sugar residues. It helps to balance the flavors and enhance the overall taste. I heat equal quantities of sugar and water to make this sugar syrup.
COCONUT JELLY
Coconut jelly is used in lychee iced tea to add texture and an extra layer of flavour. The translucent, often colourful pieces of coconut jelly can make the iced tea visually appealing, adding an attractive element to the presentation.
BASIL SEEDS
Basil seeds are sometimes used in lychee iced tea to add texture and nutritional benefits. When soaked, basil seeds develop a gel-like outer layer while retaining a slight crunchiness at the center.
TEA BAGS
Tea bags are integral to the preparation of lychee iced tea, serving as the foundation for its flavor profile. Steeped in hot water, they infuse the beverage with a rich and aromatic essence, whether it’s the bold notes of black tea or the delicate nuances of green tea. Once brewed and cooled, the tea becomes the canvas upon which the sweetness of lychee and any additional ingredients, like basil seeds, can harmonize. Black tea bags work best but you can also try using jasmine tea bags.

TIPS TO MAKE LYCHEE ICE TEA WITH COCONUT JELLY
- Adjust the sweetness to your taste by controlling the amount of sugar or sweeteners added. Consider using a combination of lychee syrup and sugar syrup for added depth of flavor.
- Enhance the drink by adding complementary flavors such as coconut jelly, basil seeds, or even a splash of lemon juice for brightness.

- 2 cups water, hot
- 2 black tea bags
- 1 cup coconut water
- ½ tsp agar agar
- ½ tbsp basil seeds (sabja seeds)
- ¾ water
- 8 lychees, deseeded
- 2 tbsp sugar syrup
- 8 fresh lychee, deseeded
- Start by brewing tea bags in hot water for at least 5-10 minutes.
- For the coconut jelly, add coconut water and agar agar to a heavy-bottomed saucepan. Bring the mixture to a boil, then pour it into a square dish. Let it sit in the refrigerator for at least 10 minutes or until the jelly is set.
- Soak basil seeds (sabja seeds) in water for 5 minutes or until they swell up.
- In a bowl, muddle 8 deseeded lychees with 2 tbsp sugar syrup to release all the flavour and aroma.
- Assembly- in a bowl, add 8 deseeded lychees, coconut jelly, muddled lychees, basil seeds, brewed tea and ice. Mix everything together and enjoy.
