DATES
Dates are used in place of refined sugar to provide a natural sweetness. They are high in natural sugars like fructose, glucose, and sucrose, making them a healthier alternative. Dates add a creamy and sticky texture to the kulfi mixture, which helps in achieving a smooth and rich consistency. Dates are rich in dietary fiber, vitamins and minerals. These nutrients enhance the nutritional profile of the dessert.
CASHEWS
Cashews, when blended, create a creamy and smooth texture, which is essential for the rich, velvety consistency of kulfi. Cashews have a mild, slightly sweet flavor that complements the dates and chocolate without overpowering them. Cashews are a good source of healthy fats, protein, and essential minerals such as magnesium and zinc. They contribute to the overall nutritional benefits of the kulfi bites.
MILK
Milk serves as the liquid base for the kulfi mixture, helping to dissolve and blend other ingredients together. Milk adds to the creamy texture and rich mouthfeel of the kulfi. - Soak dates and cahsews in warm water for 10-15 minutes to soften them, making them easier to blend into a smooth paste
- Taste the mixture before freezing. Adjust the sweetness if needed. If you prefer a sweeter taste, you can add a few more dates or a touch of natural sweetener like honey or maple syrup (if desired).
- Make sure to blend the mixture thoroughly till no lumps are left.
- Pour the kulfi mixture into small molds or an ice cube tray for bite-sized portions. Cover with foil and insert stick. Freeze for at least 6-8 hours or overnight for the best texture.
- Adjust the amount of cocoa powder to your taste. More cocoa will give a richer chocolate flavor, while less will make it milder.
- Use fresh, soft, and high-quality dates such as Medjool dates. They are naturally sweeter and blend more smoothly.
- 14 dates, deseeded
- ¼ cup cashews
- 2 cups milk
- ¼ cup cocoa powder
- Chopped almonds
- Start by soaking deseeded dates and cashews in warm water for 15-20 mins.
- In a saucepan, add milk and cocoa powder. Once the cocoa powder is nicely incorporated into the milk and there are no lumps, add the soaked dates and cashews. Cook on medium heat until the milk comes to a boil and the dates and cashews become soft and mushy.
- Let this mixture come to room temperature, then add it to a mixer grinder and blend until smooth.
- Take a silicone ice cube tray and add chopped almonds in the bottom.
- Pour the kulfi mixture over it, cover it with a foil and insert sticks in the middle.
- Let it freeze for at least 6 hours or till the kulfi is properly frozen. Demould your chocolate kulfi bites and enjoy.
