Today, we’re diving into the world of healthier baking with a delightful recipe for Eggless WholeWheat spiced  Carrot Cake. If you’re looking for a treat that satisfies your sweet tooth without compromising on nutrition, you’re in for a treat.

Why Whole Wheat?

Before we jump into the recipe, let’s talk about why we’ve chosen whole wheat flour. Whole wheat flour adds a nutty flavor, a denser texture, and a host of nutritional benefits compared to traditional all-purpose flour. It’s rich in fiber, vitamins, and minerals, making it a wholesome choice for this carrot cake.

INGREDIENTS USED IN EGGLESS WHOLEWHEAT  SPICED CARROT CAKE

  • BROWN SUGAR

Brown sugar adds a rich, caramel-like flavor to the carrot cake. The molasses content in brown sugar brings a depth of taste that complements the spices and enhances the overall flavor profile of the cake. This contributes to the warm and comforting taste associated with carrot cakes.

  • WHOLEWHEAT FLOUR I.E ATTA

Wholewheat flour is heavier than the commonly used, all-purpose flour. This is why, all around the world, people widely use all-purpose flour to make baked goods. While using whole wheat flour, it becomes important to incorporate air into the other elements of the dessert. One definite way to do that is by making sure you sift your dry ingredients instead of just adding them in the bowl with the wet ingredients.  

  • OIL

Oil adds richness and tenderness to baked goods. It creates a tender crumb and a moist mouthfeel, contributing to the overall texture of the finished product. It also helps extend the shelf life of baked goods by retarding the staling process. Oil creates a barrier that slows down moisture loss, keeping the mango cake moist and fresh for a longer period. Any neutral, odour free oil works well for this dates and wholewheat cake recipe.

  • MILK

Milk is a liquid ingredient that adds moisture to baked goods. It contributes to the overall hydration of the dough or batter, keeping the final product moist and tender.I prefer using whole milk for this recipe but you can use any kind of milk as per your preference and nutritional needs. I have used Nestle toned milk for this recipe. Milk adds a creamy and slightly sweet flavor to baked goods. It enhances the overall taste profile and enriches the flavor of ingredients like flour, sugar, and fat.

  • BAKING POWDER AND BAKING SODA

I used both baking powder and baking soda for this recipe. Both are leavening agents and play their roles in different ways.

  • CINNAMON POWDER

Cinnamon is a staple spice in carrot cake and provides a warm, sweet, and slightly earthy flavor. It pairs exceptionally well with the natural sweetness of carrots, creating a comforting and well-balanced taste.

  • NUTMEG POWDER

Nutmeg is another spice that adds depth and complexity to the flavor profile. It has a slightly nutty and spicy taste, and when used in moderation, it can enhance the overall richness of the cake.

EQUIPMENT USED FOR MAKING  EGGLESS WHOLEWHEAT SPICED  CARROT CAKE

This recipe doesn’t require a lot of equipment. Measuring Cups and Measuring Spoons. are an integral part of any baker’s kitchen and it’s very important to measure ingredients with precision.

A few mixing bowls and a whisk is what you need to prepare the wholewheat carrot cake batter in.

A spatula is my favourite kitchen equipment and always comes in handy at a lot of stages.

You would require vegetable grater to grate your carrots properly.

TIPS TO MAKE HEALTHY EGGLESS WHOLEWHEAT SPICED  CARROT CAKE

  • Opt for fresh and high-quality ingredients, especially when it comes to carrots. Freshly grated carrots will impart a natural sweetness and moisture to the cake.
  • Choose fine whole wheat flour to avoid a dense texture in your cake. Fine whole wheat flour works better in cakes, providing a lighter crumb.
  • While brown sugar is commonly used in carrot cake recipes, you can experiment with alternative sweeteners like coconut sugar or maple syrup. These alternatives can provide a different flavor profile while maintaining sweetness.
  • Chopped nuts, such as walnuts or pecans, add a delightful crunch to the cake. Raisins can also contribute a chewy texture. Feel free to customize these additions based on your preferences.
  • Use freshly ground spices like cinnamon and nutmeg for a more vibrant and robust flavor. Pre-ground spices can lose their potency over time.

WHOLEWHEAT CARROT CAKE

Ingredients
  • ½ cup milk
  • 1 tsp lemon juice
  • ½ cup caster sugar
  • ½ cup brown sugar
  • ½ cup oil
  • 1 tsp vanilla extract
  • 1 tsp orange zest
  • 1 cup wholewheat flour
  • ½ tsp baking soda
  • 1 tsp baking powder
  • ½ tsp cinnamon powder
  • ¼ tsp nutmeg powder
  • ¼ tsp ginger powder
  • 1 cup carrot, grated
  • ½ cup walnuts, chopped
  • Cream cheese frosting-
  • ½ cup cream cheese
  • ¼ cup butter
  • ½ cup icing sugar
  • For the topping-
  • ¼ cup cranberries, chopped
  • ¼ cup walnuts, chopped
Instructions
  1. Grease a 5 inch circle tin with oil and line it with parchment paper.
  2. In a large bowl, whisk in milk and lemon juice together.
  3. Now add in caster sugar, brown sugar, oil and vanilla extract and whisk till everything combines.
  4. To this add the remaining dry ingredients- whole wheat flour, baking powder, baking soda, nutmeg powder, ginger powder and cinnamon powder.
  5. Now fold in grated ⁠carrots and chopped walnuts. Mix everything together.
  6. Transfer the batter in the prepared baking pan and bake at 180*C for 40-50 minutes or until a skewer inserted comes out clean.
  7. Meanwhile make some cream cheese frosting by combining the cream cheese frosting ingredients using a hand blender.
  8. ⁠Decorate your cake with the cream cheese frosting and chopped cranberries and walnuts.
