TIPS TO MAKE THIS RED VELVET WAFER ROLLS
- Mix the batter until the ingredients are just combined to avoid developing too much gluten, which could make the wafer rolls tough instead of crispy.
- Sift the flour, cocoa powder to ensure even distribution and to prevent any lumps in the batter.
- The batter should be spreadable but not too runny. If it’s too thick, add a small amount of milk to loosen it, and if it’s too thin, add a bit more flour to achieve the right consistency.
- As soon as the wafers come out of the oven, roll them into shape while they’re still warm and pliable. This helps them hold their form without cracking.
- Once the rolls are shaped, let them cool completely before filling them with the cream cheese frosting. This ensures the frosting doesn’t melt and makes the rolls easier to handle.

- ½ cup +2 tbsp milk
- ¼ tsp vinegar
- ½ tsp red food colour
- ¼ cup butter
- ¼ cup sugar
- ½ cup flour
- 1 tbsp cocoa powder
- Cream cheese frosting
- ½ cup cream cheese
- ¼ cup butter
- ¼ cup sugar
- ½ cup whipped cream( ¼ cup whipping cream whipped till stiff peaks)
- Combine warm milk and vinegar together and mix until the milk startes to curdle.
- Add ½ tsp red food colour and mix it using a whisk.
- Now, add butter, sugar, flour and cocoa powder. Whisk until a smooth batter is achieved.
- Heat the waffle cone maker on medium flame and pour 1 tbsp of batter onto it. Close the maker and cook it from both the sides by flipping the cone maker.
- Remove carefully and shape it into a wafer roll using a thick and cylindrical stick . Be careful as it may still be hot, but shape it quickly before it hardens.
- For the cream cheese frosting- In a bowl add softened butter and sugar. Whisk it well till all the sugar is combined and no lumps are left
- Add softened cream cheese and combine everything together.
- Lastly fold in whipped cream and transfer the frosting into piping bag .
- Pipe the cream cheese frosting in the wafer rolls and enjoy!
