Gluten free Mango Bread Recipe
- 2 cups gluten-free flour
- 1 tsp baking powder
- 1 tsp cinnamon, ground
- 1 cup granulated sugar
- ½ cup coconut oil
- 1 cup mango puree
- 3 eggs
- ½ tsp vanilla extract
- ½ cup shredded coconut
- 1 cups mangos, diced
- ½ cup walnuts, crushed
- For the topping
- roasted coconut
- Pre-heat the oven to 180 degrees C. Grease a large loaf tin. In a medium bowl, whisk together flour, baking powder and cinnamon.
- In a large bowl, beat together the sugar, oil, eggs, mango puree
and vanilla extract. Fold the dry ingredients into the wet ingredients. Fold in the diced mango, shredded coconutand crushed walnuts. - Bake for 40-50 minutes or until a toothpick inserted into the
centre comes out clean. - Top with toasted coconut.
