EGGLESS PEANUT BUTTER COOKIES

Picture this: a golden-brown exterior, delicately crumbly yet firm to the touch, hinting at the promise of a soft, chewy interior. These cookies are more than just a symphony of flavor and texture. They’re a journey back in time, evoking memories of simpler days spent in the warmth of a kitchen, where the aroma of freshly baked cookies filled the air with anticipation and joy. So, go ahead, take a bite and experience the magic for yourself. These peanut butter cookies aren’t just a snack; they’re a slice of happiness in every mouthful.

INGREDIENTS USED IN PEANUT BUTTER COOKIES

WHOLE WHEAT FLOUR

Whole wheat flour offers a healthier alternative to refined flour, adding fiber and a nutty flavor. It contributes to the structure of the cookies while imparting a slightly denser texture, making them more wholesome.

MILK

Milk helps dilute the batter to achieve the desired consistency. This makes the batter easier to work with and results in a smoother texture. I have used Nestle milk for this recipe.

BUTTER

Butter helps create a tender and crumbly texture in the biscuits. It acts as a binding agent, helping to hold the ingredients together. This is essential for forming a cohesive dough that can be easily shaped into biscuits. Butter aids in the browning of the biscuits during baking, giving them an appealing golden color.

PEANUT BUTTER

Peanut butter acts as a binding agent and also gives structure to the cookie.It also provides a beautiful flavor to the cookie.

EQUIPMENTS USED IN MAKING PEANUT BUTTER COOKIES

The kind of equipment you use when you’re baking makes a huge difference to the end result! I would recommend you to use good quality mixing bowls and other equipment so that your Peanut Butter Cookies  comes out delicious!

To mix all my ingredients together, I’m using Borosil’s 100% Borosilicate Glass Bowl which is microwave and oven safe, plus the bowls are super easy to clean and handle, which makes my baking process totally hassle free!

Not a single day goes in my kitchen when I don’t use a Silicon Spatula, this is the one I recommend. Same goes for my set of Measuring Cups and Measuring Spoons.

3 INGREDIENT PEANUT BUTTER COOKIES- EGGLESS

 

TIPS TO MAKE PEANUT BUTTER COOKIES

Ensure that the butter is cold enough to properly rub it with the dry ingredients.

Melt peanut butter in a microwave so that it can incorporate well in the dough.

Make sure to refrigerate your cookie dough before shaping .

Shape your cookie dough into a shape that resembles peanut and again chill it for 30 mins.Do not skip this step .

PEANUT BUTTER COOKIES

Ingredients
  • 1+1/4 cup whole wheat flour
  • 6 tbsp icing sugar
  • ¼ tsp baking powder
  • ¼ cup butter, cold (55g)
  • ¼ cup peanut butter
  • ¼ cup milk, warm
Instructions
  1. In a bowl, combine wholewheat flour, icing sugar and baking powder. Mix the dry ingredients well.
  2. ⁠Add the cold butter to the dry mix. Using your fingers incorporate the butter into the dry ingredients until you achieve a sandy consistency.
  3. ⁠Now add peanut butter and milk. Heat the peanut butter in microwave for few seconds before adding. Combine everything together to form a soft dough. If the dough feels too soft, refrigerate it for 15-20 minutes before shaping.
  4. Take two small pieces of dough and position them diagonally to each other so that they stick and resemble a peanut shape. Then, use a fork to create indents on both pieces of dough.⁠
  5. Freeze the cookies for 15-20 minutes so they hold shape while baking. Do not skip this step otherwise the cookies may spread too much in the oven.
  6. ⁠Preheat the oven to 180 degrees celsius and bake the chilled cookies for 12-15 minutes or until the edges are golden brown.
