INGREDIENTS USED IN MAKING HEALTHY CHOCOLATE PUDDING

  • Cottage cheese (paneer)

Cottage cheese, also known as paneer, forms the creamy base of this pudding. It’s rich in protein, calcium, and essential nutrients. Its mild flavor blends perfectly with the other ingredients, while its smooth texture ensures the pudding is creamy and satisfying. Cottage cheese is also low in fat, making it a healthier alternative to traditional pudding bases like heavy cream or custard.

  • Milk

Milk helps to adjust the consistency of the pudding, making it smoother and easier to blend. It adds a bit of richness and enhances the overall creaminess. You can use any type of milk, whether it’s whole milk for a richer taste, skim milk for a lighter version, or even plant-based milk like almond or oat for a dairy-free option. I use Nestle milk in my recipes.

  • Cocoa powder

Cocoa powder is the key ingredient that gives this pudding its rich chocolate flavor. It’s packed with antioxidants and provides a deep, intense chocolate taste without adding extra sugar or fat. Using unsweetened cocoa powder allows you to control the sweetness of the pudding while benefiting from the healthful properties of cocoa. I use van houten or hershey’s cocoa powder.

  • Honey

Honey acts as the natural sweetener in this recipe, offering a subtle sweetness without the need for refined sugar. Honey also adds a slight floral note to the pudding, enhancing its flavor complexity. You can adjust the amount of honey to suit your taste preferences.

  • Melted Dark chocolate

Melted dark chocolate adds an extra layer of richness and depth to the pudding. Using dark chocolate not only intensifies the chocolate flavor but also provides a smooth, luxurious finish to the pudding. Opt for high-quality dark chocolate. I used Callebaut 55% dark chocolate in this recipe.

EQUIPMENT USED IN MAKING HEALTHY CHOCOLATE PUDDING

Measuring Cups and Measuring Spoons are the first thing that anybody needs. The right quantities will help in the desired outcome so these two things are a must. You will need mixing bowls as well to melt the chocolate as well.

A blender is required to mix all the ingredients.

Small ramekins or large serving dish to set the mousse.

Other basics  that are required are mixing spoons, whisks and spatulas for an easy process.

Ingredients
  • 150 g cottage cheese (paneer)
  • 7 tbsp milk
  • 1+1/2 tbsp cocoa powder
  • 1+1/2 tbsp honey
  • ⅓ cup (60g) dark chocolate, melted
  • Cocoa powder, for dusting
Instructions
  1. Begin by crumbling the cottage cheese (paneer) to ensure it blends smoothly.
  2. In a blender, combine the crumbled paneer, milk, cocoa powder, honey, and melted dark chocolate.
  3. Blend the mixture until it resembles a thick chocolate smoothie.
  4. Pour the mixture either in small bowls or one large serving dish and refrigerate it overnight or for 6-8 hours to set.
  5. Before serving, dust with cocoa powder and enjoy.
