INGREDIENTS USED IN BEST EGGLESS FRENCH TOAST
Brioche Bread
The soft, airy crumb of brioche absorbs the French toast batter well without falling apart, ensuring that the bread stays tender and moist after cooking. This results in a melt-in-your-mouth texture, which is ideal for French toast. Due to its slightly denser structure compared to regular sandwich bread, brioche can soak up the custard batter more effectively without becoming overly soggy. This allows the flavors of the batter to infuse deeply into the bread. Brioche’s golden color and slightly shiny crust enhance the visual appeal of the French toast, making it look more appetizing and luxurious.
Custard powder
When mixed with milk and heated during the cooking process, custard powder helps to thicken the French toast batter slightly, giving it a richer and more luxurious texture. This ensures that the batter adheres well to the bread, creating a smooth, custard-like coating when cooked. Custard powder often contains a hint of yellow colouring, which gives the French toast a warm, golden hue, making it visually appealing and more appetizing. I use this custard powder for my recipes.
Milk
Milk acts as the primary liquid component of the French toast batter, providing a smooth and creamy consistency that helps coat the bread evenly. It serves as the base in which other ingredients like custard powder and condensed milk are dissolved. It absorbs and distributes the flavors of the custard powder, condensed milk, and other ingredients throughout the bread, ensuring a consistent and rich taste in every bite. I use this milk for my recipes but you can use any milk according to your dietary preferances.
Condensed milk
Condensed milk adds a rich sweetness to the French toast batter, eliminating the need for additional sugar. The thick, velvety texture of condensed milk contributes to the overall creaminess of the French toast batter. This helps create a richer, more luxurious coating for the bread, resulting in a softer and more indulgent French toast. Condensed milk helps retain moisture in the bread as it cooks, preventing the French toast from drying out.
Chocolate spread/Nutella
Nutella or chocolate spread adds richness and decadence to the dish, making it more satisfying and indulgent. The hazelnut flavour in Nutella, if used, also adds a nutty undertone that complements the sweetness of the custard and condensed milk. When the sandwich is cooked, the chocolate spread melts slightly, providing a gooey and creamy texture inside the crisp, golden-brown bread. This contrast between the crispy exterior and the soft, melty interior enhances the overall eating experience.

TIPS TO MAKE BEST EGGLESS FRENCH TOAST
- If possible, use day-old or slightly stale brioche bread. Fresh bread can become too soft and fall apart when soaked in the batter. Brioche is ideal for French toast because of its richness and slight sweetness, but if it’s a bit stale, it will hold up better during cooking.
- When whisking the custard powder and condensed milk into the milk, take your time to ensure there are no lumps. You can sift the custard powder into the milk to help with this. A smooth batter ensures an even coating on the bread.
- Make sure to cook it until it’s a deep golden brown on each side. This ensures that the custard is cooked through and the bread is crispy on the outside while remaining soft inside.
- You can experiment with different fillings like Biscoff spread, peanut butter, or even a fruity jam to customize the flavour to your liking.
