TIPS TO MAKE THIS 4 INGREDIENTS MANGO PANEER CHEESECAKE
- Use fresh, soft paneer for a smoother texture. If using store-bought paneer, soak it in warm water for 10-15 minutes to soften it before blending.
- Choose ripe, sweet mangoes for the best flavor. Alphonso mangoes are particularly well-suited for desserts due to their rich sweetness and vibrant color.
- Chill in the refrigerator for at least 4-6 hours, or until the cheesecake is set.
- Blend the paneer mixture, mango puree, and icing sugar together until completely smooth. Taste the mixture and adjust the sweetness with more icing sugar if needed.
- Use sifted icing sugar to avoid lumps and ensure a smooth mixture.
- For the base
- 6 digestive biscuits
- 2 tbsp melted butter
- For the filling
- ½ cup paneer
- 1 cup mango chunks
- 2 tbsp milk
- 2 tbsp icing sugar
- Start by crushing digestive biscuits in a blender and mix them with melted butter.
- Press the biscuit mixture onto the base of two ramekins.
- For the filling, crumble the paneer with your hands. In a blender, add the crumbled paneer, mango chunks, milk, and icing sugar. Blend until a smooth consistency is achieved.
- Pour the filling over the biscuit base and refrigerate for 2-3 hours.
- Garnish the cheesecake with mango puree on top and serve chilled.
