Star fruit fuljhar soda—my fizzy little obsession this summer.

It’s tangy, minty, citrusy, and salty-sweet in the most refreshing way. Made with fresh star fruit (kamrakh), mint, lemon juice, chaat masala, and just the right hint of black salt—blended into a bold, punchy shot that packs serious flavor.

I pour that magic into a tiny shot glass, drop it into chilled soda, and let the fireworks begin. The fuljhar crackles, the soda fizzes, and the whole drink turns into a mini celebration in a glass. It’s playful, super refreshing, and honestly… a little addictive.

INGREDIENTS USED IN FULJHAR SODA

  • STAR FRUIT

Star fruit (kamrakh) is the heart of this soda—it brings a naturally tangy-sweet flavor that’s super refreshing and tropical. When blended with mint, lemon, and chaat masala, it creates a bold, zesty base that balances perfectly with fizzy soda. Its slight sourness wakes up the palate, making each sip bright, sharp, and insanely satisfying.

  • SODA

Soda water, also known as carbonated water, plays a crucial role in making fuljhar soda. Its effervescence adds a delightful fizz to the drink, creating a refreshing and lively texture. When combined with the tangy star fruit, soda water enhances the overall flavour profile, balancing the sweetness with a subtle acidity. Moreover, the carbonation of the soda water helps to elevate the drink, making it light and perfect for quenching thirst on a hot summer day.

  • MINT LEAVES

Mint leaves play a refreshing and aromatic role in fuljhar soda, adding a burst of freshness to the drink. The crisp, herbaceous notes of mint complement the tangy sweetness of the kamrakh.

  • LEMON JUICE

Lemon juice contributes a refreshing citrusy aroma that invigorates the senses and complements the fruity notes of the kamrakh. The acidity of the lemon juice also helps to cut through the sweetness, preventing the drink from becoming overly cloying. Overall, lemon juice adds a vibrant and refreshing element to fuljhar soda.

  • SPICES

The spices add a unique savoury touch to the beverage. Adding salt and black salt also causes fizz when added to the soda. Black salt helps to balance the overall taste by adding a hint of saltiness without overpowering the other flavours. These spices elevate the flavour profile of fuljhar soda, making it more dynamic and flavorful.

EQUIPMENTS USED FOR MAKING FULIJHAR SODA

This recipe comes together quickly and hardly needs any equipment.

A correct proportion of all the ingredients will guarantee the best taste, so you will need measuring spoons and measuring cups to measure quantities of all the ingredients.

You will need a blender to make the jamun pulp. I have used my Nutrifresh blender in this recipe.

You will need a shot glass and a glass much larger in size to drop the shot glass in.

TIPS TO MAKE FULJHAR SODA

  1. Choose ripe star fruit:Go for ones that are golden-yellow with a slight green tint and firm to the touch. Ripe ones have a balanced sweet-tart flavor that really shines in the soda.
  2. Balance the flavors:Taste your blended mixture before adding soda—adjust salt, lemon, or sugar as needed. Star fruit can vary in sweetness.
  3. Use chilled soda:Cold soda enhances the fizz and keeps the fuljhar effect strong. Warm soda will flatten the drink.
  4. Add fuljhar (popping candy) last:For maximum fizz and crackle, drop the shot into the soda just before serving. It’s all about the dramatic moment.
  5. Serve immediately:This drink is best enjoyed fresh while it’s still bubbling and alive with that crackling effect.
  6. Optional twist:Add a pinch of chili powder for a spicy kick or rim your glass with chaat masala + salt for extra flavor.

Ingredients
  • 2 starfruit/ kamrakh
  • 2 tbsp mint leaves
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 1 tsp black salt
  • 1 tsp chaat masala
  • 2 tbsp sugar
  • 2-3 tbsp water as required
  • Soda as required
Instructions
  1. In a blender jar add startfruit, mint leaves,lemon juice, salt, black salt, chaat masala and water. Blend everything together.
  2. ⁠Pour this mixture in a shot glass . This quantity makes 2 shot glasses of 60 mL each.
  3. ⁠Fill your glass with soda almost to the top, then carefully drop one shot glass inside the soda and enjoy.
