  • FLOUR

  • SUGAR

It provides a smooth, creamy base for the batter, ensuring a consistent mixture and helping the rolls bake evenly. During baking, butter melts and creates steam, which contributes to the delicate crispness of the wafer. Its fat content also enhances the tenderness and prevents the wafers from becoming too dry or brittle.

  • MILK

The kind of equipment you use when you’re baking makes a huge difference to the end result! I would recommend you to use good quality mixing bowls and other equipment so that the end result is as good as process.

Not a single day goes in my kitchen when I don’t use a spatula and a whisk. Same goes for my set of Measuring Cups and Measuring Spoons.

One main thing that you’ll need to make these coffee wafer rolls is a waffle cone maker.

TIPS TO MAKE THIS RED VELVET WAFER ROLLS

  1. Mix the batter until the ingredients are just combined to avoid developing too much gluten, which could make the wafer rolls tough instead of crispy.
  2. Sift the flour, cocoa powder to ensure even distribution and to prevent any lumps in the batter.
  3. The batter should be spreadable but not too runny. If it’s too thick, add a small amount of milk to loosen it, and if it’s too thin, add a bit more flour to achieve the right consistency.
  4. As soon as the wafers come out of the oven, roll them into shape while they’re still warm and pliable. This helps them hold their form without cracking.
  5. Once the rolls are shaped, let them cool completely before filling them with the cream cheese frosting. This ensures the frosting doesn’t melt and makes the rolls easier to handle.
  6. While classic cream cheese frosting works wonderfully, you can add flavor variations like vanilla, cocoa powder, or even a touch of cinnamon to customize the filling to your taste.
  7. Keep the wafer rolls in an airtight container to preserve their crispiness. If storing for a longer time, consider refrigerating them and filling them just before serving to maintain the crisp texture.


RED VELVET WAFER ROLLS

Ingredients
  • ½ cup +2 tbsp milk
  • ¼ tsp vinegar
  • ½ tsp red food colour
  • ¼ cup butter
  • ¼ cup sugar
  • ½ cup flour
  • 1 tbsp cocoa powder
  • Cream cheese frosting
  • ½ cup cream cheese
  • ¼ cup butter
  • ¼ cup sugar
  • ½ cup whipped cream( ¼ cup whipping cream whipped till stiff peaks)
Instructions
  1. Combine warm milk and vinegar together and mix until the milk startes to curdle.
  2. ⁠Add ½ tsp red food colour and mix it using a whisk.
  3. ⁠Now, add butter, sugar, flour and cocoa powder. Whisk until a smooth batter is achieved.
  4. ⁠Heat the waffle cone maker on medium flame and pour 1 tbsp of batter onto it. Close the maker and cook it from both the sides by flipping the cone maker.
  5. ⁠Remove carefully and shape it into a wafer roll using a thick and cylindrical stick . ⁠Be careful as it may still be hot, but shape it quickly before it hardens.
  6. ⁠For the cream cheese frosting- In a bowl add softened butter and sugar. Whisk it well till all the sugar is combined and no lumps are left
  7. ⁠Add softened cream cheese and combine everything together.
  8. ⁠Lastly fold in whipped cream and transfer the frosting into piping bag .
  9. ⁠Pipe the cream cheese frosting in the wafer rolls and enjoy!
