MILK
Milk is a crucial ingredient , providing the foundational richness and creamy texture that makes this dessert so delightful. he natural fat content in milk adds depth and richness to the flavor profile of Mango Kulfi Bites. This creamy base complements the sweetness of the mango, creating a well-balanced dessert.The proteins in milk help stabilize the mixture, giving the kulfi its characteristic firmness and smoothness when frozen.I use nestle milk in my recipes.
DATES
Dates add a natural sweetness and depth of flavor to Mango Kulfi Bites, enhancing their richness without the need for refined sugar. Blending dates into the kulfi mixture not only sweetens it but also contributes a subtle caramel-like taste that complements the mango perfectly. Additionally, dates provide a boost of fiber and essential nutrients, making the dessert a slightly healthier indulgence. CASHEWS

MANGO
- Soak dates and cahsews in warm water for 10-15 minutes to soften them, making them easier to blend into a smooth paste
- Taste the mixture before freezing. Adjust the sweetness if needed. The mixture should have a good balance of mango’s fruity freshness and the creamy richness of milk and cashews.
- Make sure to blend the mixture thoroughly till no lumps are left.
- Pour the kulfi mixture into small molds or an ice cube tray for bite-sized portions. Cover with foil and insert sticks . Freeze for at least 6-8 hours or overnight for the best texture.
- 2 cups milk
- 14 dates , deseeded and soaked
- ¼ cup cashews, soaked
- 1 cup mango chunks
- chopped pistachios and saffron strands, for garnish
- Start by soaking deseeded dates and cashews in warm water for 15-20 mins.
- In a sauce pan add milk, soaked dates, cashews and cook on medium heat until the milk comes to a boil and dates and cashews becomes soft and mushy.
- In a blender jar add mango chunks and milk mixture and blend till you achieve a smooth consistency.
- Take a silicone ice cube tray and add chopped pistachios and saffron strands in the bottom.
- Pour the kulfi mixture over it, cover it with a foil and insert sticks in the middle.
- Let it refrigerate for 5-6 hours or till the kulfi is set.
- Demould your mango kulfi bites and enjoy.
