  • MILK

TIPS TO MAKE MANGO KULFI BITES

  1. Soak dates and cahsews in warm water for 10-15 minutes to soften them, making them easier to blend into a smooth paste
  2.  Taste the mixture before freezing. Adjust the sweetness  if needed. The mixture should have a good balance of mango’s fruity freshness and the creamy richness of milk and cashews.
  3. Make sure to blend the mixture thoroughly till no lumps are left.
  4. Pour the kulfi mixture into small molds or an ice cube tray for bite-sized portions. Cover with foil and insert sticks . Freeze for at least 6-8 hours or overnight for the best texture.

Ingredients
  • 2 cups milk
  • 14 dates , deseeded and soaked
  • ¼ cup cashews, soaked
  • 1 cup mango chunks
  • chopped pistachios and saffron strands, for garnish
Instructions
  1. Start by soaking deseeded dates and cashews in warm water for 15-20 mins.
  2. In a sauce pan add milk, soaked dates, cashews and cook on medium heat until the milk comes to a boil and dates and cashews becomes soft and mushy.
  3. ⁠In a blender jar add mango chunks and milk mixture and blend till you achieve a smooth consistency.
  4. ⁠Take a silicone ice cube tray and add chopped pistachios and saffron strands in the bottom.
  5. ⁠Pour the kulfi mixture over it, cover it with a foil and insert sticks in the middle.
  6. ⁠Let it refrigerate for 5-6 hours or till the kulfi is set.
  7. Demould your mango kulfi bites and enjoy.
