The versatility of this fruit cannot be talked about enough. But, to start off with something quick, easy and simple, I’m here with a Mango Ice Cream in a blender recipe.

Condensed Milk
Condensed milk is sweetened with sugar and has a rich, caramelized flavor. When added to the ice cream mixture, condensed milk provides sweetness without the need for additional sugar. It has a distinctive flavor that adds depth and complexity to the ice cream. I have used Nestle Milkmaid to make this recipe but you can use any kind of condensed milk that is readily available to you.
Fresh Cream
The main ingredient that gives the ice cream its entire structure and base is the fresh cream. This makes the ice cream get its real texture and feel. The high fat content of fresh cream helps create a rich and indulgent mouthfeel, making the ice cream more satisfying and luxurious. The fat molecules in the cream help stabilize the ice cream mixture, preventing it from becoming too icy or crystallized during freezing. It helps distribute the flavour evenly throughout the ice cream, ensuring that each bite is bursting with delicious mango flavour.
Mangoes
The star flavour of this ice cream and of so many summer recipes in India is Mango. I have used local mangoes in this recipe. Make sure to use ripe and deep coloured mangoes for this recipe. Mangoes contribute to the sweetness of the ice cream as well as adding a little bit of tartness and balancing the overall flavour profile of the ice cream. Mangoes are rich in vitamins, minerals, and antioxidants, including vitamin C, vitamin A, and dietary fibre. By incorporating mangoes into the ice cream, you can enjoy the nutritional benefits of this nutritious fruit while indulging in a delicious frozen treat.
Milk powder
Milk powder contains proteins and fats that contribute to the creaminess and richness of the ice cream. When added to the ice cream mixture, milk powder helps create a smoother and silkier texture, similar to that of traditional dairy ice cream. It also gives a velvety mouthfeel. I use Nestle Milk powder for my recipes.

Not a lot of equipment is required to make this Mango Cheesecake Ice Cream. However, a few kitchen staples that should always be there in the kitchen are mentioned below.
Measuring Cups and Measuring Spoons are the first thing that anybody who in cooking or baking needs. The right quantities will help in the desired outcome so these two things are a must.
An electric blender is necessary to blend all the ingredients into a smooth ice cream base batter.
Spatulas are useful to scrape down the ice cream from the blender jar.
Finally, a solid utensil in which you’ll freeze the ice cream is also required. I used my Alda loaf pan to set my ice cream.

TIPS TO MAKE THIS MANGO ICE CREAM IN A BLENDER
- Choose mangoes that are ripe and have a deeper colour. This will ensure maximum flavour and visual appeal for the ice cream.

- 3 mangoes, chopped
- 1+1/2 cups fresh cream
- ¾ cup condensed milk
- ¾ cup milk powder
- In a blender jar add chopped mangoes, fresh cream, condensed milk and milk powder. Blend till you achieve a smooth consistency.
- Transfer the ice cream mix in a 8x4 inch loaf pan.
- Cover it with cling wrap and freeze the ice cream overnight.
- Take out the ice cream once properly set and let it thaw for 10 mins before scooping.
