INGREDIENTS USED IN CHOCOLATE YOGURT CLUSTERS

  • YOGURT/HUNG CURD

Hung curd provides a thick, creamy texture that forms the base of the clusters. Yogurt is rich in protein, calcium, and probiotics, which are beneficial for gut health. When frozen, the yogurt mixture remains firm enough to be coated in chocolate without falling apart. Yogurt has a naturally cooling effect, which enhances the refreshing quality of the dessert, making it especially enjoyable on warm days.

I have used this yogurt for my recipe.

  • COCOA POWDER

Cocoa powder plays a crucial role in elevating the flavor profile of chocolate yogurt clusters. By blending cocoa powder with plain yogurt and sweeteners such as honey or maple syrup, you create a base that balances the tanginess of yogurt with rich, chocolatey notes. This combination not only enhances the taste but also adds a subtle bitterness characteristic of cocoa, making the clusters more complex and satisfying.

  • HONEY

Honey serves as a natural sweetener and binder in chocolate yogurt clusters, playing a dual role in enhancing both taste and texture. When mixed with plain yogurt and cocoa powder, honey adds a delicate sweetness that complements the rich chocolate flavor without overpowering it. It helps achieve a balanced sweetness in the clusters, making them enjoyable for those who prefer desserts that aren’t overly sugary.

  • HAZELNUTS

Hazelnuts bring a delightful crunch and rich nutty flavor to chocolate yogurt clusters, complementing the creamy yogurt and cocoa powder mixture perfectly. When incorporated into the clusters, hazelnuts add a satisfying texture that contrasts with the smoothness of yogurt.

  • DARK CHOCOLATE

Coating chocolate yogurt clusters with dark chocolate adds a decadent layer of richness and depth to this already delightful treat. Dark chocolate, known for its intense cocoa flavor and slight bitterness, contrasts beautifully with the creamy yogurt and enhances the overall chocolate experience.

EQUIPMENTS USED IN MAKING CHOCOLATE YOGURT CLUSTERS

Measuring Cups and Measuring Spoons are the first thing that anybody needs. The right quantities will help in the desired outcome so these two things are a must. You will need mixing bowls as well to make the yogurt mixture and to melt the chocolate as well.

Other basics  that are required are mixing spoons, whisks and spatulas for an easy process.

You will need parchment paper to freeze the clusters as it is easier to remove the clusters from it.

TIPS TO MAKE THIS CHOCOLATE YOGURT CLUSTERS

  1. Full-fat yogurt will yield a creamier curd, which is ideal for this recipe. Let it hang for longer if needed, or press gently to speed up the process.
  2. Make sure there is enough space around each cluster to prevent them from sticking together.
  3. When dipping the frozen clusters into the chocolate, work quickly to prevent the clusters from thawing. Thawed clusters can be difficult to coat evenly.
  4. Feel free to experiment with different fruit chunks or flavorings in the yogurt mixture for variety.

 

CHOCOLATE YOGURT CLUSTERS

Ingredients
  • 3 cups yogurt or home made dahi
  • 1+1/2 tbsp honey
  • 1+1/2 tbsp cocoa powder
  • ½ cup hazelnuts
  • 1+1/2cups dark chocolate
  • 1 tbsp oil
Instructions
  1. Take a large sieve over a bowl and lay a muslin cloth on it. Pour the yogurt into it and let it hang for 40-45 mins till all the water is drained and you are left with 1+1/2 cups of yogurt.
  2. ⁠Take a bowl and add hung curd, honey, cocoa powder and chopped hazelnuts. Mix it well till everything is nicely combined.
  3. ⁠Now lay parchment paper on a tray and scoop out equal portions on chocolate yogurt mix . Freeze them for about 5-6 hours.
  4. ⁠Meanwhile, take chocolate and oil and melt it in a microwave at 30 seconds interval till completely melted .
  5. ⁠Once the chocolate has cooled a bit, dip the frozen clusters carefully into it and coat evenly from all sides and add chopped hazelnuts on top as well.
  6. ⁠Freeze again until chocolate sets completely.
