TIPS TO MAKE 2 INGREDIENT CHOCOLATE TRUFFLES
- To avoid lumps, sift the cocoa powder before mixing it with the condensed milk.
- Line your 6-inch dish with parchment paper or plastic wrap. This will make it easier to lift out the set mixture and cut it into pieces.
- Use a spatula to smooth the surface of the mixture in the dish. This helps ensure even cutting and a uniform appearance.
- Make sure the mixture is fully chilled and firm before cutting. This helps prevent it from becoming too soft and sticky.
- Use a sharp knife to cut the truffles into pieces. Dipping the knife in hot water and wiping it clean between cuts can help achieve cleaner edges.
- After cutting, you can dust the pieces with additional cocoa powder to prevent them from sticking together and to enhance their appearance.
- Keep the cut truffles in an airtight container in the refrigerator.
- 1 cup (300g) condensed milk
- 1 cup (100g) cocoa powder
- Extra cocoa powder, for dusting
- In a bowl, add condensed milk and microwave it for 1 minute. Alternatively, you can also cook it on the stove until it comes to simmer.
- Gradually sift the cocoa powder into the warm condensed milk, adding it in three batches and mixing well after each addition.
- Once all the cocoa powder is fully incorporated, the mixture will become very thick. Transfer it to a 6-inch square dish lined with cling film.
- Refrigerate it for at least 2 hours. Once set, demould it on chopping board dusted with cocoa powder.
- Dust more cocoa powder on top. Use a hot knife to cut them into 9 square truffles. Shape the edges with your hands.
