- 1 cup fresh cream
- 1 tsp instant coffee powder
- 2 cups dark chocolate, finely chopped
- Cocoa powder, for rolling
- Mix the cream and coffee powder in a saucepan over low-medium heat and bring it to a simmer.
- Put all the chopped chocolate in a medium-sized bowl and pour the hot cream over it. Let it stand undisturbed for a few minutes while the heat of the cream melts the chocolate. Use a spatula or a whisk to combine the chocolate and cream together till you get a smooth mixture.
- Let the ganache sit in the refrigerator for at least 2 hours.
- Once chilled, use an ice cream scoop or a spoon to take small portions of the chocolate mixture and shape them into 1-inch spheres.
- After all the truffles have been shaped, roll them around in some cocoa powder for the final touch. These can be stored in the refrigerator for 4-5 days.
