COFFEE CHOCOLATE TRUFFLES
 
 
Ingredients
  • 1 cup fresh cream
  • 1 tsp instant coffee powder
  • 2 cups dark chocolate, finely chopped
  • Cocoa powder, for rolling
Instructions
  1. Mix the cream and coffee powder in a saucepan over low-medium heat and bring it to a simmer.
  2. Put all the chopped chocolate in a medium-sized bowl and pour the hot cream over it. Let it stand undisturbed for a few minutes while the heat of the cream melts the chocolate. Use a spatula or a whisk to combine the chocolate and cream together till you get a smooth mixture.
  3. Let the ganache sit in the refrigerator for at least 2 hours.
  4. Once chilled, use an ice cream scoop or a spoon to take small portions of the chocolate mixture and shape them into 1-inch spheres.
  5. After all the truffles have been shaped, roll them around in some cocoa powder for the final touch. These can be stored in the refrigerator for 4-5 days.
