You can enjoy the most delicious seasonal fruits in their natural forms, but this guava ice cream is such a revelation. This looks absolutely smashing & once you make this, there is no going back. Better than any store-bought ice cream ever, you must try it to believe it.
Refreshing & tropical, this ice cream blends the sweetness of guava with the creaminess from the cashews and the slight tanginess from the sprinkle of black salt & red chilli powder. INGREDIENTS USED IN MAKING GUAVA ICE CREAM
GUAVA
Guava is a common tropical fruit having a pronounced & typical fragrance. It’s outer skin is slightly rough & it’s insides may be white or light pink with seeds, which are safe to consume. Guava also has a high level of pectin, is a rich source of Vitamin C & dietary fibre and is more than 80% water. The sweet floral aroma of guava enhances the taste of the ice cream & gives it a more complex flavour profile.
CASHEWS
Cashews are a source of healthy fats, protein, fibre and are a rich source of copper, magnesium, manganese, phosphorus & zinc. Cashews in this guava ice cream provide it an extra creaminess while increasing the nutritional quotient.
FRESH CREAM
Fresh cream adds richness and creaminess to the ice cream giving it a smooth and luxurious texture. When incorporated into the ice cream mixture, fresh cream adds a smooth and creamy mouthfeel, enhancing the overall texture of the dessert. Fresh cream helps emulsify the ingredients in the ice cream mixture. This ensures that the ice cream freezes evenly and prevents the formation of ice crystals resulting in a smooth and creamy texture. I use Amul’s Fresh Cream for all my recipes.
SUGAR
Sugar is a fundamental ingredient in the guava ice cream & is added to enhance the sweetness. It also helps stabilise the ice cream & complements the creamy texture.
EQUIPMENTS USED IN MAKING GUAVA ICE CREAM
Measuring Cups and Measuring Spoons are the first thing that anybody who in cooking or baking needs. The right quantities will help in the desired outcome so these two things are a must.
A mixer grinder to blend everything together.
Spatulas are useful to scrape down the ice cream from the blender jar.
TIPS TO KEEP IN MIND WHILE MAKING THE GUAVA ICE CREAM
- Soak the cashews in hot water for at least 15-20 minutes so that it can soften & blend easily with the other ingredients.
- Choose a ripe yet firm guava for maximum flavour.
- Blend all the ingredients carefully till they are smooth & lump-free. make sure that you do not over blend it though to prevent the cream from splitting & turning into butter.
- Let the guava ice cream freeze for at least 7-8 hours or overnight to ensure that it sets properly.
- Although a personal preference, but I recommend sprinkling a little black salt & red chilli powder on the guava ice cream. It lends it a complex flavour profile of sweetness, tanginess & spice.

- 2 guavas
- ½ cup cashews
- ½ cup hot water
- ½ cup fresh cream
- ¼ cup sugar
- 1 tbsp beetroot juice
- Take a ripe yet firm guava. Cut the top & scoop out the flesh with a spoon without breaking the outer shell. If the guava is too hard, you can microwave it for 30-40 seconds.
- In a bowl, soak the cashews in hot water. Cover & keep it aside for 15-20 minutes.
- Take a small piece of beetroot. Blend it in a mixer grinder & strain the pulp for the juice.
- In a mixer grinder jar, add the scooped out guava flesh, soaked cashews (without the soaking liquid), fresh cream, sugar & the beetroot juice. Blend it well till the mixture is smooth & lump free.
- If your guava seeds are too tough or haven't blended, you can also strain the mixture. Add the ice cream mixture into the guava shells & cover with its top. Place it in the freezer or 8 hours or overnight.
- Once frozen, cut the guava into wedges. Sprinkle it with black salt & chilli powder which is optional & serve immediately.
