TIPS TO MAKE PROTEIN CHOCOLATE CHEESECAKE
- Use digestive biscuits or any firm cookies for the base. Crush them finely and mix with melted butter until it resembles wet sand.
- Press the mixture firmly into the bottom of ramekins to create an even layer. Chill it in the fridge for 10–15 minutes to set before adding the filling.
- Use a blender or food processor to combine paneer, milk, cocoa powder, protein powder, honey, and melted dark chocolate. This ensures a silky, lump-free texture.If the mixture feels too thick, add a splash of milk to adjust the consistency.
- Adjust the quantity of honey to suit your taste, keeping in mind that dark chocolate and cocoa powder add some bitterness.
- Melt the dark chocolate gently using a double boiler or in the microwave in 15-second intervals to avoid burning. Allow it to cool slightly before mixing into the filling to prevent curdling.
- Add a decorative touch with grated chocolate, cocoa powder dusting, or fresh berries on top just before serving for an elegant presentation.

- 6 digestive biscuits
- 2 tbsp butter, melted

- 150 g cottage cheese (paneer)
- ½ cup milk
- 1+1/2 tbsp cocoa powder
- 1+1/2 tbsp honey
- 1 scoop protein powder
- ⅓ (60g) cup dark chocolate, melted
- All the digestive biscuits in a blender and pulse them till they are nicely crushed. You can also crush the biscuits using a ziplock bag and rolling pin to crush the biscuits.
- Take the biscuits in a bowl and add melted butter to it. Mix well till it resembles wet sand.
- Divide the biscuits base equally into two portions and lay them in glass ramekins. Press them evenly to form the cheesecake base and set them aside.
- To make the cheesecake filling, take cottage cheese in a plate or bowl and crumble it finely using your hands.
- Now add the crumbled cottage cheese in a blender jar along with milk, cocoa powder, honey, one scoop of protein powder and melted dark chocolate.
- Blend at high speed till the mixture comes together and becomes smooth and lump free.
- Transfer this mixture into a bowl of your choice and refrigerate for 3-4 hours or till it sets completely.
