Cranberry Orange Loaf Cake

 The festive season is here again and that means unlimited desserts and lots of love! I’ve been sharing a wide variety of strawberry recipes with all of you but today I thought let’s share something a little different.

 Cranberries are my new addiction and I just can’t stop putting them in my desserts! This Cranberry Orange Loaf Cake is what fruity cake dreams are all about. It has the perfect amount of tartness, sweetness and chewiness that comes from dried cranberries. I used US cranberries in this cake and I couldn’t be happier with the results.

 Why Cranberries

Deciding to use US cranberries in this cake turned out to be a really good decision. Many people consider cranberries to be a superfood because of their high nutrient and antioxidant content.

Cranberries are native to North America and are now grown in northern United States, Chile and Canada. I don’t know why but I haven’t seen many people use cranberries in India. I really think it’s something everyone should try. It goes perfectly with many desserts.

 Other ingredients in the cranberry orange loaf cake

The other ingredients of this cranberry orange loaf cake are extremely basic. It uses orange zest and orange juice and since oranges are in season right now, this cake comes out beautifully. 

 One thing that I absolutely love about this cake is how the milk chocolate chunks and cranberries go phenomenally together. It’s the perfect combination because cranberries are extremely tart and we need some sweet component to balance that tartness out.

 Apart from this, you have your everyday vegetable oil, flour and rising agents in the recipe. So let’s get baking!

Cranberry Orange Loaf Cake

Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 to 3 tablespoons orange zest
  • ¼ cup vegetable oil
  • 1 cup castor sugar
  • 1 egg
  • ¼ cup orange juice
  • ½ cup milk
  • 1 cup chopped milk chocolate
  • ¾ cup US cranberries
Instructions
  1. Preheat the oven to 180C. In a medium bowl, mix together the flour, orange zest, baking powder and baking soda. Set aside.
  2. In a large bowl, mix the vegetable oil and sugar. Beat in the egg. Add the orange juice.
  3. Alternate milk and dry ingredients to the wet ingredients, mixing well after each addition. You should begin and end with the dry ingredients. Do not over mix.
  4. Add the chopped milk chocolate and cranberries.
  5. Pour the mixture into a 9×5 loaf pan. Bake for 30-40 minutes or until toothpick inserted in the centre comes out clean.

    Hi,

    I tried this today. While it tasted great, the texture wasn’t so good. Took more than an hour to bake, let it cool for half an hour and was still crumbling while I tried to cut it. Also all the cranberries had sunk to the bottom! Any pointers on what could be the reason?
