EGGLESS COFFEE ATTA CAKE IN A PAN

But what if we could capture that rich coffee flavor in a cake, and not just any cake, but one that’s made with wholesome whole wheat flour (atta), needs only a handful of pantry ingredients, and requires no oven? Welcome to the world of Coffee Atta Cake—a simple, delicious, and healthy treat you can whip up in a pan right on your stovetop.

Whether you’re craving a cozy snack with your evening cup of tea or looking for a quick dessert option, this cake is here to save the day. The best part? You don’t need to be a seasoned baker to pull this off. With just a few basic ingredients like whole wheat flour, sugar, instant coffee, and milk, you can make a fluffy and moist cake that’s perfect for any occasion. It’s the ultimate solution for those days when you want something homemade but don’t have the time or patience for complex recipes.

The Coffee Atta Cake is not just about simplicity—it’s also a healthier alternative to traditional cakes. By using whole wheat flour, you’re giving your cake a boost of fiber, making it a guilt-free indulgence. Plus, the rich coffee flavor pairs perfectly with the earthy undertones of atta, resulting in a cake that’s fragrant, comforting, and utterly satisfying.

INGREDIENTS USED IN MAKING COFFEE ATTA CAKE IN A PAN

  • MILK

Milk helps dilute the batter to achieve the desired consistency. This makes the batter easier to work with and results in a smoother texture. In recipes that use baking powder as a leavening agent, milk can react with it to produce carbon dioxide gas. This gas creates air bubbles within the batter, causing the cake to rise and become fluffy. Using whole milk, as specified in the recipe, adds a luxurious creaminess to the batter, elevating the overall indulgence of the cake.

  • OIL

Oil adds tenderness to the cake’s crumb. It coats the flour particles and interferes with gluten formation, resulting in a more delicate and less chewy texture. It is often easier to mix into cake batters compared to solid fats like butter. It can be blended more uniformly with other ingredients, ensuring an even distribution of fats throughout the batter. The choice of vegetable oil adds neutrality, allowing the coffee flavor to shine without any overpowering buttery notes.

  • WHOLE WHEAT FLOUR

Whole wheat flour, commonly known as atta in many parts of the world, is a popular alternative to refined flour (all-purpose flour). Using whole wheat flour in baking, especially in cakes like our Coffee Atta Cake, not only adds a delightful nutty flavor but also comes with numerous health benefits. Let’s dive into why whole wheat flour is a fantastic choice for this recipe and how it enhances the overall texture and taste of the cake.

  • SUGAR

The most obvious reason is that sugar adds sweetness to the cake, making it enjoyable and satisfying to eat. Sugar helps keep the cake moist, preventing it from becoming dry and crumbly during the cooking process. As it combines with the other ingredients, it helps create a light and fluffy texture, making each bite a heavenly experience. I used this sugar for the recipe,

  • LEAVENING AGENTS

Leavening agents play a crucial role in giving vanilla cake its light and fluffy texture. There are typically two types of leavening agents used in baking vanilla cake: baking powder and/or baking soda. In a vanilla cake recipe, these leavening agents are typically added to the dry ingredients (flour, sugar, etc.) and react with the other ingredients (usually liquid) when mixed together. This reaction creates bubbles in the batter, causing it to rise during baking, resulting in a soft and fluffy cake.

EQUIPMENTS USED FOR MAKING COFFEE ATTA CAKE IN A PAN

Measuring Cups and Measuring Spoons. are an integral part of any baker’s kitchen and it’s very important to measure ingredients with precision.

A whisk or spatula is essential for combining the dry and wet ingredients efficiently. Ensure that the utensil you choose is capable of thoroughly mixing the batter without overdoing it.

You’ll need a 8 inch and 10 inch flat pans.

TIPS TO MAKE COFFEE ATTA CAKE IN A PAN

1. Ensure that ingredients are at room temperature. This promotes even mixing and a smoother batter.
2. Mix the batter until just combined. Overmixing can result in a dense cake.
3. A heavy-bottomed, non-stick pan is ideal for making cakes on the stovetop. It helps distribute heat evenly, reducing the chances of burning the cake.
4. Grease the pan with oil or butter and line it with parchment paper.
5. Always cook the cake on the lowest heat setting. High heat can cause the bottom of the cake to burn while leaving the inside undercooked. Patience is key—slow cooking will yield a perfectly cooked cake with a soft crumb.

COFFEE ATTA CAKE IN A PAN

Ingredients
  • 1 cup milk, warm
  • 1 tbsp vinegar
  • 2 tbsp instant coffee powder
  • 1 cup castor sugar
  • ½ cup sunflower oil
  • 1+1/2 cups whole wheat flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ⅓ cup mixed callets (milk, dark and white)
Instructions
  1. In a bowl add milk and vinegar and instant coffee mix it well and set it aside for 5 minutes.
  2. Then add sugar and oil and whisk it properly, till all the sugar is dissolved.
  3. Lastly, sift in flour, baking powder, baking soda and give it one final mix till you achieve a smooth lump free batter. Do not overmix at this stage.
  4. Transfer the batter into a heavy bottom non stick pan.
  5. Place a bigger heavy bottom pan on medium heat and fill it halfway with water.
  6. ⁠Now place the smaller pan with the cake batter onto it, cover it with lid and bake the cake on medium heat for 50-55 minutes. Once a skewer inserted into the centre comes out clean, you know the coffee cake is done .
  7. Let it cool slightly before you flip the pan onto your plate and demould the cake.
  8. ⁠Decorate the cake with milk, white and dark chocolate and enjoy.
