  • Form: Chocolate is available in various forms, including bars, chips and couverture. Couverture chocolate is preferred for tempering and coating due to its high cocoa butter content.

  • Flavor Profile: Different brands and types of chocolate have unique flavor notes. Experimenting with various options can help you find the perfect match for your baked goods.

 

CHOCOLATE BRANDS

1. CALLEBAUT

Established in 1911, Callebaut is a Belgian brand known for its couverture chocolate, which contains a higher percentage of cocoa butter than regular baking chocolate. This composition allows for a glossy finish and a smooth texture, making it ideal for tempering and coating. Callebaut’s consistent quality and versatility make it a staple in many professional kitchens. This is my favourite brand when it comes for anything chocolate. I use their chocolate callets in a lot of my recipes and they give the best taste and texture to my baked goods.

 

 

2. VAN LEER

Van Leer is a renowned American chocolate brand that has been a staple in the baking and confectionery industry since its establishment in 1949. Now owned by the Barry Callebaut Group, the world’s leading cocoa processor and producer of industrial chocolate, Van Leer continues to offer high-quality chocolate products tailored for professional use.

 

 

3. VAN HOUTEN

Van Houten is a historic and innovative brand in the world of cocoa and chocolate, renowned for its pioneering contributions to the industry and its commitment to quality and sustainability. Founded in 1828 by Casparus Van Houten in Amsterdam, the brand revolutionized chocolate production by inventing the hydraulic cocoa press, which significantly improved the processing of cocoa beans. This innovation laid the foundation for modern chocolate manufacturing.
