10 BAKING HACKS THAT WILL CHANGE YOUR LIFE

  • DIY BUTTERMILK

Buttermilk is added to cake sponges for its tenderizing effect, moisture retention, flavor enhancement, and its role in activating chemical leavening agents, resulting in a softer, moister, and more flavorful cake.

Don’t have buttermilk on hand? You can easily make a substitute by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk. Let it sit for about 5-10 minutes until it curdles slightly, then use it as a buttermilk replacement in your recipe.

Here are few of my recipes which called for buttermilk that can elevate your cake sponges.

  • INSTANT COFFEE FLAVOUR BOOSTER

Enhance the flavour of chocolate-based desserts by adding a teaspoon of instant coffee or espresso powder to the batter. It won’t make the dessert taste like coffee but will intensify the chocolate flavour. Coffee enhances the perception of sweetness in chocolate by balancing its bitterness and acidity, resulting in a more harmonious flavour experience.

  • PARCHMENT PAPER HACK

To line a baking tin with parchment paper , start by measuring and cutting a piece of parchment paper slightly larger than the base of the tin. Lightly grease the bottom and sides of the tin with butter or cooking spray to provide a surface for the parchment paper to adhere to without tearing. Carefully place the parchment paper over the greased bottom of the tin, ensuring it lays flat and covers the entire surface. Gently press down on the paper to help it adhere, smoothing out any creases or wrinkles with your hand.

If needed, crumple the parchment paper into a ball and then flatten it out before placing it in the tin to help reduce wrinkles. Finally, trim any excess parchment paper hanging over the edges of the tin with a pair of scissors. This method ensures a smooth lining for your baking tin.

  • VANILLA SUGAR HACK

Making vanilla sugar with used vanilla pods is a fantastic way to repurpose these flavorful remnants. Simply collect your used vanilla pods after scraping out the seeds for other recipes. Place the pods in a container with granulated sugar, ensuring they are fully submerged. Seal the container tightly and let it sit for at least one week, allowing the residual vanilla flavor to infuse into the sugar. Shake or stir the container occasionally to distribute the flavor evenly. Over time, the sugar will become infused with the delightful essence of vanilla, ready to enhance your favorite recipes with a subtle but delicious flavor.

The sugar will absorb the vanilla flavour over time, creating a fragrant and flavourful sweetener perfect for adding a hint of vanilla to your baked goods. Store the vanilla sugar in an airtight container at room temperature, away from heat and moisture. As you use the sugar, you can continue to top it up with more granulated sugar and vanilla beans to maintain its flavour .

  • BROWN SUGAR SOFTENING HACK

If your brown sugar has turned into a brick, revive it by placing a slice of bread or a damp paper towel in the container. Seal it tightly and let it sit overnight. The moisture from the bread or towel will soften the sugar, making it easy to scoop and measure.

  • PERFECT CUPCAKE HACK

A clever hack for baking cupcakes involves placing a layer of uncooked rice beneath each cupcake liner, you only need enough rice to create a thin, even layer covering the bottom of the liner.

This not only helps to distribute heat evenly but also prevents the cupcakes from sticking to the pan. The rice serves as a heat conductor, ensuring that the bottoms of the cupcakes bake uniformly without becoming overly browned. Additionally, the rice absorbs any excess moisture, preventing the cupcakes from becoming soggy or oily.

After baking, the rice can be discarded, leaving behind perfectly baked cupcakes with evenly browned bottoms. This hack is especially useful when baking delicate or moist cupcakes, ensuring they turn out just right every time.

  • PERFECT FLAKY PIE CRUST HACK

For the flakiest pie crust, add a tablespoon of vinegar to your dough. Vinegar inhibit gluten formation, resulting in a tender, flaky crust. Plus, it evaporate during baking, leaving behind a crisp, golden shell.

  • THE FLAVOUR INFUSION METHOD

Elevate your baking game by infusing flavour directly into your ingredients. For example, add citrus zest to sugar and let it sit for a few hours before using it in recipes. The sugar absorbs the citrus oils, imparting a subtle yet delightful flavour to your baked goods.

  • BANANA BREAD SHORTCUT

A clever hack for  when you’re craving homemade banana bread but don’t have ripe bananas on hand . Preheat your oven to  150°C, then place unpeeled bananas on a baking sheet lined with parchment paper or aluminum foil. Bake the bananas for about 15-20 minutes until the skins turn black and the bananas soften. Once they’re cool enough to handle, peel the bananas and mash them until smooth. This method not only speeds up the ripening process but also intensifies the bananas’ flavor, resulting in a more delicious banana bread. It’s a convenient solution which only requires 15-20 minutes.

  • INSTANT PIPING BAG TRICK

Don’t have a piping bag on hand? Use a sturdy plastic zip-top bag instead. Fill the bag with frosting or icing, seal it, and snip off a tiny corner. You’ll have a makeshift piping bag ready to decorate cupcakes, cakes, or cookies in no time.
