These date & atta brownies in a microwave is something that you must try out in your kitchen if you have a sweet tooth like me but also want to indulge guilt-free. These brownies are fudgy, moist, soft & melt-in-the-mouth. You’ll never be able to tell that these are made with healthy clean ingredients & neither will those who you offer them too. Even the fussiest of eaters will enjoy this. This is especially great if you crave for something sweet after meals as it won’t give you a sugar rush or give a massive spike to your glucose levels.

INGREDIENTS USED IN DATE & ATTA BROWNIES IN A MICROWAVE

  • MILK

Milk plays a crucial role in baking adding moisture to the cake & preventing it from becoming too dry. It adds a natural sweetness & richness to the cake due to it’s fat content, making the crumb of the cake softer, lighter & airier. Using milk in the cake prevents it from becoming too crumbly & hydrates the dry ingredients creating a softer & smoother batter.

  • COCOA POWDER

Cocoa powder is essential in providing the cake a rich chocolate flavor, deep color & a lighter texture. Its rich flavor  balances the sweetness of the jaggery & makes the cake look rich & tempting. It is the primary source of lending a chocolaty flavour to baked goods.

  • WHOLE WHEAT FLOUR

Whole wheat flour, commonly known as atta in many parts of the world, is a popular alternative to refined flour (all-purpose flour). Using whole wheat flour in baking, especially in cakes not only adds a delightful nutty flavor but also comes with numerous health benefits.

  • DATES

Dates are a wonderful ingredient to use in baking, adding natural sweetness, moisture, and a unique flavor profile to various recipes like muffins, cookies, and cakes. They are packed with essential nutrients such as fiber, vitamins (including vitamin B), and minerals such as potassium, magnesium, and copper. Adding dates to your cake not only enhances the nutritional profile but also contributes to the overall well-being of those enjoying the treat.

  • GHEE

Like any clarified butter, ghee is composed almost entirely of fat, 62% of which consists of saturated fats. It is also rich in oxidized cholesterol. Ghee is free of potentially unhealthy additives, preservatives and trans fats. Thanks to its pure form and low moisture content, ghee is shelf-stable and can stay fresh for up to a year without refrigeration.

  • DARK CHOCOLATE

Chocolate is the star ingredient in these fudge brownies. Using high-quality chocolate ensures a deep, intense chocolate flavor. Whether you prefer dark, semi-sweet, or a mix of both, the chocolate you choose will define the taste profile of your brownies. The chocolate also helps create that irresistible fudgy consistency that makes these brownies so special.

EQUIPMENTS YOU NEED FOR THE DATE & ATTA CAKE IN MICROWAVE

This recipe requires minimal equipment.

Measuring cups & spoons are integral for everyone who intends to bake & aids in measuring the ingredients with precision.

A good mixing bowl to combine everything is necessary. You also need a microwave to bake the brownies and a spatula to combine all the ingredients.

A microwave safe dish is also required to bake the brownies in.

TIPS TO MAKE THE DATE & ATTA BROWNIES IN A MICROWAVE

  1. Combine the ingredients thoroughly but avoid overmixing as it may make the brownies dense.
  2. Do not overbake the brownies as it may harden or burn.
  3. Line your baking dish with parchment paper or grease it well to ensure the brownies don’t stick to the dish & come out clean & intact.
  4. Allow the brownies to cool completely before cutting into them. This makes slicing easier.
  5. Feel free to add nuts, chocolate chips or dried fruits on top of the brownies before baking for extra texture and flavor.

DATE & ATTA BROWNIES IN A MICROWAVE

Ingredients
  • 12 Medjool dates, pitted
  • ¾ cup hot milk
  • 1 cup dark chocolate, chopped
  • ¼ cup ghee
  • ½ cup atta (whole wheat flour)
  • 2 tbsp cocoa powder
Instructions
  1. Deseed the medjool dates.
  2. Soak the dates in the hot milk for 10-15 minutes or until soft.
  3. Puree the dates with the milk till smooth.
  4. Melt the chopped dark chocolate with the ghee in a microwave safe bowl in 30 second intervals till the chocolate melts.
  5. Combine the melted chocolate mixture with the date & milk puree.
  6. Mix till it all comes together.
  7. Now, add the atta & cocoa powder.
  8. Mix well till the batter is smooth but avoid overmixing.
  9. Add the batter to a greased 5-inch microwave safe baking dish.
  10. Cook in the microwave for 4.5 minutes on regular heating mode.
  11. Remove the dish from the oven & let the brownies cool down.
  12. Demould, cut into squares & serve warm or cold.
