ONE BOWL BANANA OATS CAKE

This delicious One Bowl Banana Oats Cake is refined sugar and refined flour free and takes only 2 minutes to cook in the microwave. It is a one bowl cake that is moist, chocolaty and so flavourful. You can also engage your children in making this banana oats cake by asking them to mash the banana and whisking the batter. This cake can be enjoyed guilt free by people of all ages and you can hardly taste the flavour of bananas, so even the pickiest of eaters will not be able to guess that this cake is sweetened with banana and jaggery instead of refined sugar. The banana is a rich source of potassium, vitamins, minerals and fibre. It also provides an energy boost unlike refined sugar and the soft tender crumb of the cake will melt in your mouth and satisfy your sweet tooth unlike anything else.

This cake uses both, oats flour and whole wheat flour (atta) making it comparatively healthier and offering a hearty texture and wholesomeness to the cake which is also a great option as a snack. This lighter, healthier treat is also flavoured with cinnamon upping its nutritional quotient.

INGREDIENTS USED IN ONE BOWL BANANA OATS CAKE

  • BUTTER

Butter contributes a rich, creamy and buttery flavor to the cake. It enhances the overall taste and provides a satisfying mouthfeel. Butter adds moisture to the mixture resulting in a smooth batter.

  • BANANA

Bananas act as a natural sweetener and binding agent in this cake. Their high moisture content makes the batter soft, while their natural sugars caramelize during cooking, adding depth of flavor. Ripe bananas are best because they mash easily and provide better sweetness. Additionally, bananas are rich in potassium, fiber and essential vitamins, making your cake not just delicious but also nutritious.

  • MILK

Milk is a liquid ingredient that adds moisture to baked goods. It contributes to the overall hydration of the dough or batter, keeping the final product moist and tender. I prefer using whole milk for this recipe, but you can use any kind of milk as per your preference and nutritional needs. Milk helps in creating a smooth batter and provides moisture to the cake. TIPS TO MAKE ONE BOWL BANANA OATS CAKE IN A MICROWAVE

  1. Make sure to use a ripe banana for the recipe for extra moistness and sweetness.
  2. Mash the banana really well so there are no chunks in the batter.

Ingredients
  • 1 banana
  • 3 tbsp butter
  • 5 tbsp warm milk
  • 2 + ½ tbsp jaggery powder
  • 6 tbsp whole wheat flour (atta)
  • 6 tbsp oats flour
  • ¼ tsp baking soda
  • ¼ tsp baking powder
  • ¼ tsp cinnamon powder
  • ¼ cup chocolate chunks
Instructions
  1. Peel and mash a ripe banana till there are no large chunks.
  2. Add in the butter and warm milk and mix well.
  3. Add in the jaggery powder, whole wheat flour, oats flour, baking soda, baking powder and cinnamon powder.
  4. Mix well with a whisk but avoid overmixing the batter.
  5. Once thoroughly combined, add in the chocolate chunks to the batter and fold it in.
  6. Now, clean the edges a bit to make the cake look prettier and microwave at regular heating mode for only 2 minutes.
  7. Once done, let the cake cool a little or serve it warm and enjoy.
