Eggless Ragi Chocolate Cake in a Microwave

There is nothing better than indulging your sweet tooth when you feel like it. And this Eggless Ragi Chocolate Cake in a microwave lets you do just that without any guilt. It is moist, indulgent, soft & tastes so good that you will want to make it every day. This cake is proof that you don’t have to use fancy ingredients or equipment to whip up something delicious at home & the best part is that it is ready in 10 minutes.

The glaze adds a layer of decadence & sinfulness to the slightly dense cake, making it a perfect choice for a quick treat or a thoughtful gesture for loved ones.

INGREDIENTS USED IN EGGLESS RAGI CHOCOLATE CAKE IN MICROWAVE

  • YOGURT

Yogurt acts as a leavening agent & adds moistness & softness to the cake. It also acts as a substitute for eggs making it perfect for everyone. The slight sour tang of the yogurt also helps balance the sweetness in the cake. Plus, it is also nutritious.

  • BAKING SODA

Baking soda reacts with the yogurt in the recipe & results in the cake being soft and moist. The baking soda also enables the cake to rise & become light & fluffy.

  • JAGGERY

Jaggery is a natural unrefined sweetener used as a substitute for sugar. It adds a rich caramel-like flavor to the cake & makes the texture moister yet dense. It also lends a darker colour to the cake enhancing the appearance & adds a subtle complexity to the texture & flavor of the cake.

  • COCOA POWDER

Cocoa powder is essential in providing the cake a rich chocolate flavor, deep color & a lighter texture. Its rich flavor  balances the sweetness of the jaggery & makes the cake look rich & tempting. It is the primary source of lending a chocolaty flavour to baked goods.

  • RAGI FLOUR

Ragi flour is the heart of this recipe, that is gluten-free, rich in fiber, iron, calcium & other essential nutrients. It aids in digestion, improves bone health, provides energy, lends a unique nutty flavor to the cake & also increases the nutritional value of the cake significantly.

TIPS TO MAKE EGGLESS RAGI CHOCOLATE CAKE IN MICROWAVE

  1. Use jaggery as a healthier alternative that will also lend a caramel-like taste to your cake.
  2. Combine the ingredients thoroughly but avoid overmixing as it may make the cake dense.
  3. Add milk & yogurt as the ragi may tend to dry out the cake.
  4. Let the cake cool slightly before adding the glaze as that will help it set nicely.
  5. Adding almonds to the glaze will increase the nutritional quotient as well as lend a crunch to the cake.

Eggless Ragi Chocolate Cake in a Microwave

Ingredients
  • 1 cup yogurt
  • ½ tsp baking soda
  • ½ cup butter, melted (113g)
  • ¾ cup jaggery powder
  • 1 tbsp coffee powder
  • ¼ cup warm milk
  • ½ cup ragi flour
  • ½ cup whole wheat flour
  • ¼ cup cocoa powder
  • 1 tsp baking powder
  • For the glaze
  • 1+ ½ cup dark chocolate
  • ⅓ cup almonds, finely chopped
  • 1 tbsp oil
Instructions
  1. Grease and line a 7inch microwave safe cake mould and keep it aside.
  2. Add yogurt and baking soda in a bowl and whisk till it bubbles up.
  3. Add jaggery powder, coffee infused milk and melted butter to the same bowl and whisk well till homogeneous.
  4. Lastly, add ragi flour, whole wheat flour, baking powder and give it a final whisk to form a smooth lump free batter.
  5. ⁠Tranfer the batter into the lined cake mould .
  6. ⁠Microwave the cake for 7 minutes or till a skewer inserted in the centre comes out clean.
  7. ⁠For the glaze, melt dark chocolate in the microwave. Make sure to stir the chocolate after every 30 second intervals to prevent burning.
  8. ⁠Add in oil and chopped chocolate to the melted chocolate and glaze is ready.
  9. ⁠Once the cake has cooled down, pour chocolate almond glaze on top and serve.
