Tips and tricks while making cornflakes dream cake

1. Cold milk or oil can cause the batter to split or bake unevenly. Room temp = smoother texture.
2. A gentle tap on the counter removes large air pockets and helps the cake bake evenly.
3. ⁠Cool completely before cutting. A warm cake crumbles and won’t soak evenly or hold the ganache layer well.

4. ⁠Let ganache thicken slightly before pouring. If it’s too runny, it’ll slide off and soak the cake excessively. 10–12 minutes resting is ideal.
5. ⁠Use fresh, crisp cornflakes.
Stale flakes turn chewy quickly and lose the crunchy “dream cake” effect.

Ingredients
  • 6 tbsp milk
  • 1 tsp vinegar
  • 6 tbsp caster sugar
  • 3 tbsp oil
  • ½ + 2 tbsp all purpose flour
  • 2 tbsp cocoa powder
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • For the ganache
  • ¾ cup fresh cream
  • ¾ cup dark chocolate
  • For the cornflakes glaze
  • ½ cup cornflakes
  • ½ cup milk chocolate, melted
Instructions
  1. Add milk and vinegar in a bowl and give it a quick mix. Let the mixture rest for 5 mins to curdle.
  2. Add sugar and oil to the above mixture and whisk until nicely combined.
  3. Sift in the all purpose flour, cocoa powder, baking powder and baking soda and mix only until no flour pockets remain.
  4. Pour the batter in a greased 5-inch tin and bake at 180 degrees Celsius for 20-25 mins.
  5. Meanwhile, make the chocolate ganache by heating the cream over medium heat until it begins to simmer.
  6. Pour the hot cream over chopped dark chocolate and mix until no lumps remain.
  7. Once the cake is baked and cooled, carefully cut the top and soak it with espresso.
  8. Pour the ganache evenly over the cake and let it set slightly.
  9. Mix cornflakes with melted milk chocolate and coat the cornflakes completely.
  10. Spread an evenly layer of this mixture over the ganache and let the chocolate set before serving.
