TIPS TO MAKE PROTEIN COCOA PUFFS
- Start with 4 tablespoons of milk and mix well. Only add the 5th or 6th tablespoon if the dough feels too crumbly to roll. You want a consistency similar to soft play-dough.
- Arrange the balls in a single layer in your air fryer basket with a little space between each one. If you overcrowd the basket, the trapped steam will make the puffs soft instead of delightfully crunchy.

(If it feels too sticky, add a pinch more oat flour; if it's too crumbly, add a few drops of milk).
- Pinch off small pieces of dough and roll them between your palms into tight, marble-sized balls.
- Air fry at 170°C for 13 to 15 minutes. Give the basket a gentle shake around the 7-to-8-minute mark to ensure the puffs brown and crisp up evenly on all sides.
