EGGLESS COFFEE BEAN COOKIES IN AN AIR FRYER

If you love the aroma of freshly brewed coffee, these coffee bean cookies are a must-try. These delicate, buttery cookies combine the rich flavour of coffee and cocoa with a crisp, melt-in-the-mouth texture. The best part? They are shaped to look exactly like tiny coffee beans, making them as visually charming as they are delicious. Made with just a handful of everyday ingredients, these cookies are wonderfully simple to prepare. There is no complicated decorating involved and the characteristic coffee-bean appearance comes entirely from the way the dough is shaped and scored.

Coffee bean cookies are small, buttery biscuits designed to resemble actual coffee beans. The dough is flavoured with coffee and cocoa powder, which gives the cookies their characteristic deep brown colour and rich flavour. The cookies are traditionally shaped into small oval pieces and then gently pressed down the centre with a toothpick, skewer, or the back of a knife. This creates the distinctive central groove seen on a coffee bean. Despite their appearance, these cookies aren’t necessarily crunchy like roasted coffee beans. Instead, they have a delicate biscuit-like texture that can range from crisp to slightly crumbly depending on how thick they are shaped and how long they are baked. They make a lovely accompaniment to a cup of coffee or tea and are also perfect for gifting, festive cookie boxes, bake sales, or simply keeping a jar of homemade cookies on the kitchen counter.

INGREDIENTS USED IN MAKING EGGLESS COFFEE BEAN COOKIES

  • COFFEE

Coffee is the star ingredient of these cookies. It provides the characteristic roasted, slightly bitter flavour that makes these cookies taste distinctly like coffee. Instant coffee powder works particularly well because it dissolves easily in hot water. For a stronger coffee flavour, you can use a slightly more concentrated coffee mixture, but avoid adding excessive liquid because it can affect the consistency of the dough.

  • BUTTER

Butter provides richness, flavour and tenderness. Since the butter is melted rather than creamed, this recipe is particularly straightforward to prepare. Butter also contributes to the delicate texture of the finished cookies and gives them their characteristic buttery aroma. Use good-quality butter for the best flavour. Allow melted butter to cool slightly before combining it with the other ingredients.

  • ICING SUGAR

Icing sugar is ideal for this recipe because its fine texture blends easily into the melted butter. It gives the cookies sweetness while contributing to a smooth dough. Unlike granulated sugar, icing sugar doesn’t leave large sugar crystals in the dough, helping create a finer cookie texture.

Adding too much flour can make the dough dry and difficult to shape. While adding less flour will make the dough runny.

  • COCOA POWDER

Cocoa powder gives the cookies a deeper brown colour, making the coffee-bean appearance much more convincing. It also adds a subtle chocolate flavour. Chocolate and coffee naturally complement one another, so even a small amount of cocoa helps make the coffee flavour taste richer and more rounded.

  • CORNFLOUR

Cornflour helps create a more delicate, tender texture. It reduces some of the gluten-forming potential of the flour, helping the cookies remain crisp and crumbly rather than becoming tough or chewy.

TIPS TO KEEP IN MIND WHILE MAKING EGGLESS COFFEE BEAN COOKIES

  1. Chill the Dough Before Shaping. 15–20 minutes of chilling helps firm up the dough, making it easier to roll and carve the signature coffee bean line without losing shape.
  2. Freeze the shaped cookies again for 4-5 hours so that the cookies don’t spread while baking.
  3. Keep Sizes Uniform. This ensures all cookies cook evenly, especially important when not using an oven
  4. Use instant coffee powder. Instant coffee is particularly convenient because it dissolves easily in hot water. It also gives the cookies a concentrated coffee flavour without introducing coffee grounds into the dough.
  5. Don’t overmix. Once the flour is incorporated, mix only until the dough comes together. Excessive mixing can develop gluten and result in a firmer cookie.
  6. Make the centre groove after shaping. Trying to create the groove before forming the oval can distort the shape. Shape the cookie first, then make the central indentation.
  7. Don’t press the groove too deeply. The line should look like the natural split in a coffee bean. A shallow, neat indentation gives a much better result than cutting deeply through the cookie.
  8. Watch the baking time. The cookies are already naturally dark because of the cocoa and coffee, so you may not see a dramatic colour change during baking.
  9. Let them cool completely. The texture continues to develop as the cookies cool. Moving them around immediately after baking can cause them to break.

 

 

EGGLESS COFFEE BEAN COOKIES

Ingredients
  • 2 tbsp hot water
  • ½ tbsp instant coffee
  • 6 tbsp (85g) melted butter
  • 6 tbsp icing sugar
  • ½ cup + 3 tbsp all purpose flour
  • 1 tbsp cocoa powder
  • ½ tbsp cornflour
Instructions
  1. In a bowl, add the hot water and coffee. Mix well and keep it aside.
  2. ⁠Take butter and sugar in a bowl and whisk this together until well combined.
  3. ⁠Add in flour, cocoa powder, cornflour, coffee mixture and combine everything together to form a smooth cookie dough.
  4. ⁠Refrigerate the dough for 30-45 minutes.
  5. ⁠Once chilled, divide the dough into equal portions using 1 tbsp measurement and give them an oval shape.
  6. ⁠Place the shaped cookies on the paper liner and make a gentle cut in the middle using a sharp knife.
  7. Freeze them for another 4-5 hours to prevent the cookies from spreading.
  8. Place them in the air fryer and bake at 170 degrees Celcius for 12 minutes or until the edges become crisp.
