During baking, the butter melts and helps the cookies spread, while also contributing to their delicate, crisp edges. Butter also helps carry the flavour of the chocolate and vanilla throughout the cookie. Use softened butter rather than melted butter for better control over the texture and spread.

BROWN SUGAR
Brown sugar contributes sweetness as well as a subtle caramel-like flavour. Because it contains molasses, it also adds a small amount of moisture to the dough. This helps balance the slightly more wholesome and hearty texture of whole wheat flour, preventing the cookies from becoming overly dry.

CASTOR SUGAR
Castor sugar provides sweetness while also contributing to the texture of the cookies. Its fine crystals dissolve easily into the butter mixture, helping create a smoother dough. A mixing bowl is required to prepare the cookie dough, along with a spoon or spatula for mixing. Measuring Cups and Measuring Spoons are important for accuracy. You will also need an air fryer to bake the cookies in.

TIPS TO KEEP IN MIND WHILE MAKING MINI CHOCOCHIP COOKIES
- Chill for at Least 20–30 minutes. This is non-negotiable for air fryer baking. Chilling solidifies the fat butter in the dough. When the cold dough hits the hot air fryer, the flour sets before the butter melts completely, preventing the mini cookies from spreading.
- Work in small batches of 6 to 9 mini cookies at a time depending on the size of your basket.
- Add extra milk, 1/2 tbsp at a time if the cookie dough is not pipeable enough. And if it is too soft, add 1/2 tbsp flour at a time till it reaches the right consistency.
- Don’t add extra flour immediately if the dough seems soft. Whole wheat flour needs a little time to absorb the liquid. Let the dough rest for about 5–10 minutes before deciding whether it needs any adjustment.
- Keep the cookies the same size. The smaller the cookies, the more noticeable differences in size become during baking. Try to portion the dough evenly so that all the cookies finish baking at approximately the same time.
- Don’t overcrowd the tray. Even tiny cookies need room to spread. Give them enough space so they don’t merge into one another. If necessary, bake in batches.
- Watch them carefully. Mini cookies can go from perfectly golden to overbaked very quickly. Look for lightly golden edges rather than waiting for the entire cookie to become deeply browned.
- Let them cool before judging the texture. Freshly baked cookies are softer than cooled cookies. If they seem slightly soft when they come out of the oven, don’t immediately put them back in. Let them cool first and assess their texture once completely cooled.
- Use parchment paper. Parchment helps prevent sticking and makes transferring the cookies much easier. It also makes cleanup considerably simpler.

- ½ cup butter
- 1 tbsp brown sugar
- 2 tbsp castor sugar
- ¼ tsp vanilla extract
- ½ cup + 3 tbsp whole wheat flour
- 1 tbsp cornflour
- ¼ tsp baking soda
- ¼ cup dark chocolate chips, to fold
- 2 tbsp milk
- Add the melted butter to a bowl and mix with the brown sugar, castor sugar and vanilla.
- Dump in the whole wheat flour, cornflour, baking soda, chocolate chips and milk. Combine to form a pipeable dough.
- Transfer the dough to a piping bag and pipe the cookies into small button-sized pieces on a paper liner. Freeze them for 15-20 minutes.
- Air fry them at 170 degrees Celsius for 10 minutes.
- Let them cool completely and store in an airtight container for upto a week.
