CHOCOLATE BURNT BASQUE CHEESECAKE

This Burnt Basque Cheesecake is a rich, indulgent twist on the classic Basque-style cheesecake, made especially for chocolate lovers. Unlike a traditional cheesecake with a biscuit base and perfectly smooth surface, this one is all about embracing the rustic look — a deeply caramelised, almost burnt top, slightly cracked edges and an irresistibly creamy centre.

The cheesecake starts with a generous amount of cream cheese, creating a rich and velvety base, while Greek yoghurt adds a subtle tang that balances the sweetness and keeps the texture beautifully smooth. Fresh cream and condensed milk bring extra richness and creaminess, while castor sugar adds just the right amount of sweetness.

What makes this version extra special is the addition of chocolate spread and cocoa powder. Together, they give the cheesecake a deep, luscious chocolate flavour without overpowering the characteristic tanginess of the cream cheese. A small amount of cornflour helps the cheesecake hold its shape while keeping the centre soft and creamy, while baking powder gives the batter a little lift as it bakes.

The high-temperature bake is what creates the signature Basque cheesecake finish. As the cheesecake bakes, the surface develops a deep golden-brown, beautifully caramelised crust while the centre remains soft and slightly jiggly. Chocolate hazelnut spread adds a deep, indulgent chocolate flavour with subtle roasted hazelnut notes. It makes this version richer and more decadent than a classic Basque cheesecake while also adding to its smooth, creamy consistency. Not a lot of equipment is required to make this Burnt Basque Cheesecake. However, a few kitchen staples that should always be there in the kitchen are mentioned below.

TIPS TO MAKE CHOCOLATE BASQUE CHEESECAKE

  1. Use room-temperature ingredients: Bring the cream cheese, Greek yoghurt and fresh cream to room temperature before mixing. This helps everything combine smoothly and prevents lumps in the batter.
  2. Beat the cream cheese first: Make sure the cream cheese is completely smooth before adding the other ingredients. This creates a silky batter and avoids overmixing later.
  3. Do not overmix the batter: Once all the ingredients are combined, mix only until smooth and well incorporated. Excessive mixing can incorporate too much air, causing the cheesecake to puff up excessively and then collapse.

  6. Don’t worry about a cracked top: Cracks, wrinkles and an uneven surface are completely normal for a Basque cheesecake. The rustic appearance is part of its charm.
  7. Bake at a high temperature: The high oven temperature is essential for developing the deeply caramelised, dark top while keeping the centre soft and creamy. Avoid lowering the temperature unless your particular oven runs very hot.
  8. Keep an eye on the baking time: Every oven behaves differently. Start checking around the 20-minute mark. The top should be deeply browned while the centre should still have a noticeable jiggle when the tin is gently moved.
  9. Don’t overbake: The cheesecake may look underdone when it comes out of the oven, but it will continue to set as it cools and chills. Overbaking can result in a firm, dry centre instead of the signature creamy texture.

  • 1 + ½ cup cream cheese
  • ⅓ cup chocolate hazelnut spread
  • 6 tbsp fresh cream
  • 6 tbsp Greek yoghurt
  • 6 tbsp condensed milk
  • 3 tbsp castor sugar
  • 1 tbsp cornflour
  • 1 tbsp cocoa powder
  • ½ tsp baking powder
Instructions
  1. Preheat your oven to 200°C. Grease a 6-inch round cake tin and line it with parchment paper.
  2. In a bowl, beat the cream cheese until smooth.
  3. Now add the remaining ingredients - chocolate hazelnut spread, sugar, cornflour, baking powder, cocoa powder, yogurt, condensed milk, cream, vanilla extract. Mix until well combined.
  4. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  5. Bake in the preheated oven for about 20-25 minutes, or until the cheesecake is golden brown on top and the centre is little jiggly. The cake may rise and crack, which is normal for Basque cheesecake.
  6. Remove the cheesecake from the oven and let it cool.
  7. Once cooled, refrigerate the cheesecake for at least 4 hours or overnight before serving.
  8. When ready to serve, remove the cheesecake from the fridge, slice, and enjoy
