BISCOFF CAKE IN A MICROWAVE

INGREDIENTS USED IN BISCOFF CAKE IN A MICROWAVE

  • SUGAR

The most obvious reason is that sugar adds sweetness to the cake, making it enjoyable and satisfying to eat. In a microwave cake, sugar helps keep the cake moist, preventing it from becoming dry and crumbly during the cooking process.

  • OIL

Oil adds tenderness to the cake’s crumb. It coats the flour particles and interferes with gluten formation, resulting in a more delicate and less chewy texture. It is often easier to mix into cake batters compared to solid fats like butter. Oil can be blended more uniformly with other ingredients, ensuring an even distribution of fats throughout the batter.

  • VINEGAR

The acid in vinegar helps to tenderize gluten, the protein responsible for the structure and elasticity in baked goods. This results in a cake that is softer and more tender. White distilled vinegar is commonly used due to its neutral flavour, but you can also use apple cider vinegar or other mild vinegars.

  • MILK

Forms the liquid base of the batter, hydrating the starches in the flour and providing the moisture necessary to generate steam during microwave cooking.

  • ALL PURPOSE FLOUR

Flour helps absorb the moisture from other ingredients in the batter, which contributes to the cake’s texture and prevents it from being overly wet.  It interacts with leavening agents like baking powder and baking soda to create gas (usually carbon dioxide) that causes the cake to rise. Flour is a primary structural ingredient in cakes. It provides the framework for the cake’s crumb and gives it a cohesive texture. It also produces a tender crumb in the cake.

  • BISCOFF SPREAD

Biscoff spread has a distinct and rich flavour, characterized by the sweet and spiced taste of Speculoos cookies. Incorporating it into the cake batter infuses the entire dessert with a warm and indulgent taste. The spices and caramelized cookie flavour in Biscoff spread contribute to a delightful aroma as the cake bakes. It provides a more intricate flavour profile beyond a simple sweetness.

  • LEAVENING AGENTS

Baking powder and baking soda are used in this cake recipe as raising agents. Leavening agents introduce gas bubbles into the cake batter. TIPS TO MAKE BISCOFF CAKE IN A MICROWAVE

  1. Once the flour is added, fold gently. Overmixing develops gluten rapidly, which will make a microwave cake rubbery and tough instead of tender.
  2. White distilled vinegar is commonly used due to its neutral flavour, but you can also use apple cider vinegar or other mild vinegars.
  3. You can use low-fat dairy or dairy alternatives like almond milk or oat milk for a healthier cake.
  4. Always warm your garnish Biscoff spread for 10–12 seconds before pouring. This thins it out so it cascades smoothly across the top without dragging or tearing the delicate sponge.
  5. Microwave power varies across brands. Start checking the cake at the 2.5-minute mark with a skewer. If the top looks dry and the skewer comes out clean, stop immediately—over baking by even 20 seconds can dry out the sponge.

Ingredients
  • ½ cup milk
  • ½ tbsp vinegar
  • 3 tbsp Biscoff spread
  • ¼ cup oil
  • ¼ cup castor sugar
  • ¾ cup all purpose flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • For the garnish
  • Biscoff spread
  • Crushed biscoff cookies
Instructions
  1. Pour milk and white vinegar into a bowl, mix and let it sit for 5 mins.
  2. ⁠To this, add Biscoff spread, oil and sugar and give it a good mix.
  3. ⁠Sift in the all-purpose flour, baking powder and baking soda. Gently fold the dry ingredients in without over mixing
  4. ⁠Transfer the batter into a shallow microwave-safe dish and microwave on normal settings for 3 mins or till a skewer comes out clean.
  5. ⁠Top it up with Biscoff spread and over baking Biscoff cookies and serve immediately.
