Sugar is a fundamental ingredient in flan . It is used to create the caramel sauce that coats the bottom of the pudding moulds or dish. The sugar is melted and caramelized, providing a rich, bittersweet layer that complements the creamy custard.

Milk forms an important part of the custard base and gives the flan its smooth, soft and delicate texture. It provides the liquid needed to create a creamy custard while keeping the final dessert light enough to have that characteristic melt-in-the-mouth consistency. Milk also allows the flavours of vanilla and caramel to come through beautifully without overpowering them. Full-fat milk works particularly well when you want a richer and creamier finish.
• FRESH CREAM

TIPS TO MAKE FLAN
- Don’t overcook the caramel: Cook the sugar until it reaches a deep golden-amber colour, but remove it from the heat before it becomes dark brown. Overcooked caramel can taste bitter.
- Work quickly with the caramel: Caramel sets very fast once it starts cooling. Pour it into the mould immediately and carefully swirl the mould to coat the base evenly.
- Avoid over-whisking the eggs: Whisk the flan mixture gently just until combined. Excessive whisking creates air bubbles, which can leave tiny holes in the finished flan.
- Strain the mixture: Always pass the custard through a fine-mesh sieve. This helps remove any pieces of egg and gives the flan a much smoother, silkier texture.
- Pour gently: Pour the flan mixture slowly over the caramel to avoid creating bubbles or disturbing the caramel layer.
- Always use a water bath: The water bath provides gentle, even heat and prevents the eggs from cooking too quickly. This is essential for achieving a creamy, smooth texture.
- Keep the mould covered: Covering the mould with aluminium foil helps prevent the surface from drying out and protects the custard from direct heat.
- Don’t wait for the centre to become completely firm: The flan continues to set as it cools. Overbaking can result in a rubbery or grainy texture instead of a creamy one.
- Cool completely before refrigerating: Allow the flan to cool down after baking before transferring it to the refrigerator.
- Chill overnight: Refrigerating the flan overnight gives it enough time to fully set and allows the caramel to turn into a beautiful sauce around the custard.
- Unmould carefully: If the caramel feels stuck, dip the bottom of the mould in warm water for a few seconds or gently warm the sides. Then run a thin knife around the edges and invert it onto a plate in one confident movement.
- For the smoothest finish: Keep the entire process gentle—from whisking and straining to pouring and baking. The less air you incorporate, the smoother and more delicate your flan will be.
- • 1 cup sugar
- • 2 cups milk
- • 2 cups fresh cream
- • ½ cup condensed milk
- • 8 eggs
- • 1 tbsp vanilla extract
- Add the sugar to a pan and spread it into an even layer. Cook over medium heat without stirring until the sugar melts and turns a golden amber colour.
- Immediately pour the caramel into a 7-inch baking mould, carefully tilting the mould to spread the caramel evenly across the base. Set aside.
- In a large bowl, add the milk, fresh cream, condensed milk, eggs and vanilla extract.
- Whisk gently until all the ingredients are well combined.
- Strain the mixture through a fine-mesh sieve to remove any lumps and ensure a smooth, silky flan.
- Pour the strained flan mixture gently over the set caramel.
- Cover the mould tightly with aluminium foil.Place the mould in a larger baking tray and pour in enough hot water to create a water bath, reaching about halfway up the sides of the flan mould.
- Bake at 160°C for approximately 2½ hours, or until the edges are set while the centre still has a gentle jiggle.
- Refrigerate overnight and serve chilled.
