INGREDIENTS USED IN MAKING POPPING BOBA

  • Watermelon Juice

Watermelon juice is the star ingredient of this recipe, providing a naturally sweet, refreshing and fruity flavour to the popping boba. It also gives the pearls their beautiful pinkish-red colour and creates the juicy liquid centre that bursts in your mouth.

  • Sodium Alginate

Sodium alginate is a natural gelling agent derived from brown seaweed. It is responsible for the spherification process that gives popping boba its unique texture. When the watermelon mixture containing sodium alginate comes into contact with the calcium bath, a thin gel-like membrane forms around each droplet, trapping the liquid watermelon juice inside.

  •  Calcium Lactate

Calcium lactate provides the calcium ions needed to react with sodium alginate and form the delicate outer membrane of the popping boba. It helps the droplets hold their round shape while keeping the centre liquid and juicy. The amount of time the spheres spend in the calcium bath determines how thick their outer membrane becomes.

EQUIPMENTS USED IN MAKING POPPING BOBA

Measuring Cups and Measuring Spoons are an integral part of any baker’s kitchen, and it’s very important to measure ingredients with precision.

A spatula and a whisk help to bring the mixture together.

TIPS TO MAKE POPPING BOBA

  1. Make sure the sodium alginate is blended thoroughly with the watermelon juice to prevent lumps and ensure that the mixture forms smooth and evenly shaped spheres.
  2. Allow the watermelon mixture to rest for 15–20 minutes, or until the air bubbles disappear. This helps achieve a smoother texture and prevents irregularly shaped pearls.
  3. Ensure that the watermelon mixture has a smooth, slightly thick but pourable consistency. If the mixture is too thick, the droplets may form tails or uneven shapes instead of round spheres.
  4. Use a small measuring spoon or dropper to gently release equal-sized portions of the watermelon mixture into the calcium bath. Keep it close to the surface to prevent splashing and maintain a round shape.
  5. Avoid adding too many droplets to the calcium bath at once, as they may stick together or lose their shape. Work in small batches for the best results.
  6. Make sure the calcium lactate is completely dissolved in water before adding the watermelon mixture. Allow the calcium bath to cool to room temperature for consistent results.
  7. Let the pearls sit in the calcium bath for approximately 1–2 minutes. Avoid leaving them for too long, as the outer membrane can become thicker and firmer, reducing the signature popping sensation.
  8. Gently remove the popping boba using a slotted spoon and rinse immediately in clean water to remove any excess calcium solution.
  9. Serve the popping boba freshly prepared for the best texture and flavour. Over time, the outer membrane may continue to thicken, making the pearls less delicate and reducing their juicy, bursting effect.
