A dessert made from buns might sound a little unusual, but trust me when I say you won’t be able to guess that there’s bread in this mousse!
This Bread Mousse is one of those recipes I love because it takes the simplest ingredients and turns them into something incredibly rich, creamy and indulgent. Soft buns are cooked together with milk, dark chocolate callets, cocoa powder, custard powder and condensed milk until everything comes together into a thick, chocolatey mixture.
The best part is that there’s no complicated technique involved. Once the mixture becomes thick and lumpy, simply blend it until completely smooth and silky. Pour it into your serving container, let it chill for a couple of hours, and you’ll have a beautiful chocolate mousse-like dessert with an unbelievably creamy texture.
I love finishing it with a generous dusting of cocoa powder just before serving. The combination of deep chocolate flavour, creamy custard and that subtle richness from the buns makes every spoonful so satisfying.
It’s also a great way to use up leftover buns instead of letting them go to waste. And because everything comes together in just one pan before being blended, this is the kind of dessert you can make whenever you’re craving something chocolatey without spending hours in the kitchen.
Serve it chilled and dig straight in — you might just forget that the secret ingredient is bread!

INGREDIENTS USED IN BREAD CHOCOLATE MOUSSE
BUNS
Buns form the base of the mousse and give it its unique bread-based texture. When cooked with milk, the buns soften completely and break down into the mixture, adding body and a subtle sweetness. They also help make the mousse thick and creamy without needing any gelatin or eggs. As the mixture cooks, the bread absorbs the milk and helps create the dense, smooth texture that sets beautifully once chilled.
• MILK
Milk provides the liquid base for the mousse and helps soften the buns while bringing all the ingredients together. It adds creaminess and richness to the mixture without making it overly heavy. As the mixture cooks, the milk hydrates the buns and combines with the custard powder and cocoa to create a smooth, thick consistency.
• DARK CHOCOLATE
Dark chocolate gives the mousse its deep chocolate flavour and adds richness to the mixture. As it melts into the warm milk, it creates a smooth, glossy chocolate base and contributes to the creamy texture. The slight bitterness of dark chocolate also balances the sweetness from the condensed milk.
• CUSTARD POWDER
Custard powder is responsible for thickening the mousse and helping it achieve a soft, set texture once chilled. When heated with milk, the starch in the custard powder thickens the mixture and gives it a smooth, creamy consistency. It also helps bind the ingredients together, allowing the mousse to hold its shape while remaining soft and spoonable.
• COCOA POWDER
Cocoa powder intensifies the chocolate flavour and gives the mousse its rich, dark colour. It adds a deeper, slightly bitter chocolate note that balances the sweetness of the condensed milk. Cocoa also helps create a more pronounced chocolate flavour without making the mixture excessively sweet.
• CONDENSED MILK
Condensed milk provides sweetness, creaminess and richness to the mousse. Its thick consistency also contributes to the final body of the dessert. As it cooks with the milk, chocolate and other ingredients, it helps create a smooth and luscious mixture while giving the mousse its characteristic sweetness.

TIPS TO MAKE BREAD CHOCOLATE MOUSSE
- Use soft, fresh buns: Fresh buns blend more easily into the milk and give the mousse a smoother texture. Avoid very dry or hard buns, as they can leave small lumps.
- Use full-fat milk: Full-fat milk gives the mousse a richer and creamier texture. Avoid reducing the milk too much before all the ingredients have combined.
- Add everything before heating: Add the buns, milk, dark chocolate, custard powder, cocoa powder and condensed milk to the pan before turning on the heat. This helps the ingredients combine evenly.
- Cook on medium to low heat: Avoid high heat, as the milk and chocolate can stick to the bottom of the pan or scorch. Keep stirring continuously while the mixture thickens.
- Keep stirring: This is especially important once the custard powder starts thickening the mixture. Scrape the bottom and sides of the pan regularly to prevent burning and lumps.
- Cook until properly thick: The mixture should become a very thick, lumpy paste before you take it off the heat. If it is too loose, the mousse may not set firmly enough after chilling.
