EGGLESS CHOCOLATE CREMEUX

TIPS TO MAKE CHOCOLATE CREMEUX

  • * 1 cup milk
  • * 6 tbsp sugar
  • * 2 tbsp cornflour
  • * 3 cups fresh cream
  • * ¼ cup butter (55 g)
  • * 600 g chocolate, chopped
Instructions
  1. Take a heavy-bottomed pan and place it over medium heat.
  2. Add the milk, sugar, cornflour, fresh cream and butter to the pan.
  3. Whisk continuously until everything is well combined and the mixture comes to a boil. Continue cooking until it thickens slightly.
  4. Once the mixture is ready, pour the hot mixture over the chopped chocolate. Let it sit for a minute, then mix well until the chocolate melts completely and you achieve a silky-smooth, glossy mixture.
  5. Pour the crémeux into a container and cover the surface directly with cling film to prevent a skin from forming.
  6. Refrigerate overnight, or until completely set.
  7. Once set, use the chocolate crémeux to frost, fill or layer your cakes.
