EGGLESS CHOCOLATE CREMEUX
- * 1 cup milk
- * 6 tbsp sugar
- * 2 tbsp cornflour
- * 3 cups fresh cream
- * ¼ cup butter (55 g)
- * 600 g chocolate, chopped
- Take a heavy-bottomed pan and place it over medium heat.
- Add the milk, sugar, cornflour, fresh cream and butter to the pan.
- Whisk continuously until everything is well combined and the mixture comes to a boil. Continue cooking until it thickens slightly.
- Once the mixture is ready, pour the hot mixture over the chopped chocolate. Let it sit for a minute, then mix well until the chocolate melts completely and you achieve a silky-smooth, glossy mixture.
- Pour the crémeux into a container and cover the surface directly with cling film to prevent a skin from forming.
- Refrigerate overnight, or until completely set.
- Once set, use the chocolate crémeux to frost, fill or layer your cakes.
