GULAB JAMUN CAKE IN KATORI

This Gulab Jamun Cake in a Katori is my take on combining two of the most comforting desserts into one little cake — soft, fluffy cake meets the rich, fragrant flavours of gulab jamun. And honestly, it’s the kind of dessert that looks fancy but is incredibly simple to make at home.

The base is made with suji, nuts and gulab jamun premix, which gives the cake that beautiful gulab jamun flavour while keeping it soft and moist. Rose water and cardamom add a delicate floral and aromatic touch, while the nuts bring a little texture to every bite. The cake is baked right in a greased katori in the air fryer, making this a perfect small-batch dessert when you don’t want to make an entire cake.

But what really makes this cake special is the syrup. A warm sugar syrup infused with cardamom and saffron is poured over the freshly baked cake, allowing it to soak in and become incredibly moist, fragrant and juicy — just like gulab jamun. I love finishing it with chopped pistachios and a sprinkle of dried rose petals because they add the perfect crunch, colour and festive touch.

It’s sweet, aromatic, slightly nutty and packed with all those flavours we love in a classic Indian mithai. The combination of rose, saffron, cardamom and pistachio makes every bite feel so indulgent without requiring hours in the kitchen.

And the best part? No oven, no complicated cake decorating and no fancy equipment. Just a katori, an air fryer and a handful of simple ingredients. It’s perfect for festive occasions, dinner parties, gifting, or simply when you’re craving something warm and desi but want to make a small portion.

If you’re someone who loves experimenting with traditional Indian flavours in modern desserts, this one is definitely worth trying. Imagine a gulab jamun, but in soft, cake form — soaked in saffron syrup and finished with pistachios and rose petals. That’s exactly what this little katori cake is.

INGREDIENTS USED IN GULAB JAMUN CAKE IN KATORI

  • SEMOLINA

Using suji (semolina) in gulab jamun cupcakes can add a unique texture and flavor. Suji, with its slightly coarse texture, can create a denser and more satisfying crumb compared to traditional cupcake flour.  Additionally, suji can help absorb moisture and contribute to a slightly nutty flavor. For a gulab jamun twist, you can infuse the batter with rose water and cardamom, and consider soaking the cupcakes in a simple sugar syrup to enhance their gulab jamun-like quality.

  • SUGAR

In gulab jamun cupcakes, sugar is essential for several reasons. Firstly, it imparts the necessary sweetness that aligns with the traditional gulab jamun flavor. Beyond sweetness, sugar plays a critical role in the texture of the cupcakes, helping to create a tender crumb and retain moisture, which ensures that the cupcakes remain soft and fresh. Additionally, sugar enhances the overall flavor profile by balancing and accentuating other ingredients like rose water and cardamom.

Using gulab jamun premix in gulab jamun cupcakes can streamline the baking process while imparting authentic flavors.   • LEAVENING AGENTS

Leavening agents are essential for achieving a light and airy texture in gulab jamun cupcakes. Baking powder is commonly used to help the cupcakes rise by producing carbon dioxide during baking, resulting in a fluffy crumb. In some recipes, baking soda may be used with acidic ingredients to enhance leavening. Proper use ensures the cupcakes are neither too dense nor overly inflated, complementing the traditional gulab jamun flavors like cardamom and rose water effectively.

  • ROSE WATER

Rose water adds a distinctive floral flavor to gulab jamun cupcakes, enhancing their traditional taste. By incorporating rose water into the batter, you infuse the cupcakes with a subtle yet aromatic quality reminiscent of gulab jamun. It’s typically used sparingly to avoid overpowering the other flavors. Additionally, rose water can be mixed into a sugar syrup and drizzled over the baked cupcakes.

  • MILK

Milk is an important ingredient in gulab jamun cupcakes, adding moisture and richness to the batter. Typically, you would use milk to enhance the texture and flavor of the cupcakes. It helps in achieving a soft, tender crumb and complements the traditional gulab jamun flavours, which often include cardamom and rosewater.I use this milk for my recipes.

EQUIPMENT USED FOR MAKING  GULAB JAMUN CAKE IN KATORI

Measuring Cups and Measuring Spoons are the first thing that anybody needs. The right quantities will help in the desired outcome so these two things are a must.

 To mix all my ingredients together in, I’m using Borosil’s 100% Borosilicate Glass Bowl  which makes my baking process totally hassle free!

Other basics  that are required are mixing spoons, whisks and spatulas for an easy process.

TIPS TO MAKE GULAB JAMUN CAKE IN KARORI

  • Don’t skip grinding the suji and nuts: Blending them together gives the cake a finer texture and helps the nuts incorporate evenly into the batter.
  • Don’t overmix the batter: Once you add the dry ingredients, whisk only until everything is combined. Overmixing can make the cake dense.
  • Check your baking powder: Make sure it’s fresh, especially because this is a small-batch cake where the leavening agent makes a big difference.
  • Grease your katori well: Brush the entire inside with oil or butter and line the base with a small piece of parchment if possible. This makes demoulding much easier.
  • Don’t overfill the katori: Fill it only about ⅔ full because the cake will rise while baking.
  • Air fryer temperatures can vary: Start checking around the 15-minute mark. If the top is browning too quickly but the centre isn’t cooked, loosely cover it with foil and continue baking.
  • Don’t overbake: The cake should be just cooked through. Overbaking will make it dry, especially before adding the syrup.
  • Let the cake rest before demoulding: Allow it to cool for a few minutes so it firms up slightly and doesn’t break while removing it from the katori.
  • Make the syrup slightly thin: You want it to be pourable enough to soak into the cake. You don’t need an extremely thick one-string syrup for this recipe.
  • Pour the syrup while the cake is warm: A warm cake absorbs the syrup much better, making the inside soft and juicy.
  • Don’t add all the syrup at once: Pour it gradually and give the cake time to absorb it. This prevents the cake from becoming soggy.
  • Let it soak: After adding the syrup, let the cake sit for 5–10 minutes before serving so the flavours can really settle in.
  • Add toppings just before serving: Chopped pistachios and dried rose petals give the best texture and appearance when added at the end.
  • For an extra festive touch: Add a few saffron strands on top along with the pistachios and rose petals. It makes the cake look beautiful without any complicated decoration.

GULAB JAMUN CAKE IN KATORI

Ingredients
  • ½ cup suji (semolina)
  • 2-3 tbsp whole nuts
  • 6 tbsp castor sugar
  • ¼ cup melted ghee
  • ½ tbsp rose water
  • ¾ cup milk
  • ½ cup gulab jamun premix
  • ¼ baking powder
  • ¼ baking soda
  • ¼ tsp cardamom powder
  • Chopped pistachios, to top
  • Dried rose petals, to top
  • For the syrup
  • ¼ cup sugar
  • ½ cup water
  • ¼ tsp cardamom powder
  • Few saffron strands
Instructions
  1. Add suji and whole nuts in a blender jar and blend until nicely ground.
  2. ⁠In a bowl, add sugar, melted ghee, rosewater and whisk well.
  3. ⁠To the same mixture, add in the milk and give it a good whisk.
  4. ⁠Lastyly add in suji mixture, gulab jamun premix, cardamom powder ,baking powder and baking soda . Whisk it well to form a smooth lumpfree batter.
  5. ⁠Transfer the batter to a greased and lined katori and top it up with chopped pistachios.
  6. ⁠Airfry it at 160C for 15-20minutes or until a skewer inserted in the centre comes out clean.
  7. ⁠For the sugar syrup, take sugar, water, cardamom powder and saffron strands in a heavy bottomed saucepan and heat it on medium-high heat till the mixture reduces in volume and thickens.
  8. ⁠Once it has reached the one-string consistency or resembles a syrup, take it off the heat and let it cool. Remember the mixture will thicken more upon cooling.
  9. ⁠Demould the cake from katori and drizzle the syrup over the baked cake. Sprinkle some dried rose petals on top and serve !
