There are some desserts that are meant to be shared, and then there are desserts that make you want to grab a spoon, curl up on the couch, and enjoy every single bite yourself. This Eggless Scoopable Cookie Tin is exactly that kind of indulgence. Imagine a giant chocolate chip cookie baked until the edges are perfectly golden while the centre remains irresistibly soft, buttery, and molten. Instead of slicing it into neat cookies, you simply scoop out warm spoonfuls straight from the baking tin. Made entirely without eggs and baked in an air fryer, this dessert delivers everything you love about bakery-style cookies with minimal effort. Every spoonful is packed with pools of melted chocolate, crisp buttery edges, and a rich, soft centre that tastes like the freshest cookie you’ve ever eaten.
This cookie can also be stored. Cover the cookie tin tightly and store it at room temperature for up to two days. For longer storage, refrigerate for up to five days. Before serving again, warm individual portions in the microwave for 15–20 seconds or place the tin back into the air fryer for a few minutes to restore its gooey texture.
If you’re someone who believes that the best part of a cookie is its warm, gooey centre, this Eggless Scoopable Cookie Tin deserves a place in your baking repertoire. It’s rich, buttery, packed with melty chocolate, and wonderfully easy to make in an air fryer. The crisp edges, soft middle, and pools of molten chocolate create a dessert that feels both comforting and indulgent. Serve it fresh from the air fryer with a scoop of vanilla ice cream, gather everyone around the table with spoons in hand, and enjoy a dessert that’s designed to be shared—but so delicious, you might just want to keep it all to yourself.

INGREDIENTS USED IN MAKING SCOOPABLE COOKIE TIN
-
BUTTER
Butter forms the heart of every great cookie. It provides richness, tenderness, flavour, and helps create those crisp golden edges. Using softened butter allows it to cream beautifully with the sugars, incorporating tiny air pockets that contribute to a lighter texture while still keeping the cookie dense and chewy.
-
BROWN SUGAR
Brown sugar contains molasses, which is responsible for much of the cookie’s moisture. It gives the cookie deeper caramel flavour, a chewy texture, beautiful golden colour and soft centre. Because brown sugar attracts moisture, it helps keep the cookie gooey for much longer.
-
CASTOR SUGAR
A small amount of castor sugar balances the recipe perfectly. It helps create crisp edges, better caramelisation, slightly lighter texture and provides a balanced sweetness. Using both sugars gives you the best combination of chewiness and crispness.
-
YOGHURT
In eggless baking, yoghurt performs several important roles. It provides moisture, helps bind the dough, contributes to tenderness, and reacts with the baking soda to create gentle lift. The slight acidity also enhances flavour while ensuring the cookie doesn’t become overly dense.
-
ALL PURPOSE FLOUR
Flour gives the cookie its structure. This quantity creates a dough that spreads just enough while still producing a thick, bakery-style cookie with a soft centre. Too little flour would make the cookie greasy, while too much would result in a dry texture.
-
LEAVENING AGENTS
Although used in a tiny amount, baking soda plays an important role. It reacts with the acidity of the yoghurt, encouraging slight spread while helping the cookie brown beautifully. It also contributes to the cookie’s characteristic chewy texture. Baking powder provides gentle lift, preventing the cookie from becoming overly dense while maintaining its thick, soft interior.
-
CORNFLOUR
Cornstarch is one of the secrets behind exceptionally soft cookies. It reduces gluten formation, resulting in a softer crumb, tender bite, melt-in-the-mouth texture and thicker cookie. Many bakery-style cookie recipes rely on cornstarch for their signature softness.
-
CHOCOLATE
Using a combination of dark and milk chocolate creates layers of flavour. Milk chocolate adds sweetness and creaminess, while dark chocolate balances it with slight bitterness. Chocolate callets melt into beautiful pockets throughout the cookie, ensuring chocolate in every bite.
Large chocolate chunks create dramatic pools of melted chocolate inside the cookie. Unlike chips, they melt more slowly, giving every scoop generous ribbons of molten chocolate. Adding extra chunks on top before baking also creates a beautiful bakery-style appearance.

EQUIPMENTS USED IN MAKING SCOOPABLE COOKIE TIN
Measuring Cups and Measuring Spoons are an integral part of any baker’s kitchen and it’s very important to measure ingredients with precision.
A spatula and a whisk help to bring in the dough together in mixing bowls.
A small, slightly deep dish works best so you get crisp edges and a soft, molten center. I have used a dream cake tin to make this recipe. You will also need an air fryer to bake the cookie in.

TIPS TO KEEP IN MIND WHILE MAKING SCOOPABLE COOKIE TIN
- Always use softened butter rather than melted butter to achieve the ideal texture.
- Measure the flour accurately. Too much flour results in a dry cookie.
- Do not overmix once the flour is added.
- Use high-quality chocolate for richer flavour and smoother melting.
- Leave the centre slightly underbaked—it will continue to cook as it cools.
- Serve warm for the ultimate gooey experience.
- If the top browns too quickly, loosely cover it with foil during the final few minutes of baking.

- 100g butter
- ½ cup brown sugar
- 2 tbsp castor sugar
- 2 tbsp yoghurt
- 1 cup + 2 tbsp all purpose flour
- ⅛ tsp baking soda
- ½ tsp baking powder
- 2 tsp cornstarch
- ¼ cup dark and milk chocolate callets + more for the top
- 7 large chocolate chunks
- In a bowl, add the butter, brown sugar and castor sugar. Whisk it well till slightly pale.
- To this, add the yoghurt and give it a quick mix.
- Now, add in the dry ingredients, all purpose flour, baking soda, baking powder, cornstarch and the chocolate callets. Knead to form a dough.
- Divide the dough into 7 equal sized portions, flatten it out and stuff each portion with the chocolate chunks. Shape them into balls and place them in a 5 inch mould or a dream cake tin.
- Place the tin in the freezer for 15-20 minutes.
- Bake in the air fryer at 170 degrees for 15-20 minutes until the top is golden brown.
