HOT FUDGE CAKE IN AIRFRYER

A warm, gooey chocolate dessert that feels like a brownie and chocolate pudding had the most delicious baby. This Hot Fudge Cake has everything you want in a comforting chocolate treat: a soft, rich cake layer on top, a delicate crackly cocoa crust, and a thick, luscious hot fudge sauce hidden underneath. Every spoonful gives you the perfect combination of fluffy chocolate cake and warm, molten sauce.

The best part is that it comes together in one dish, with no separate sauce-making required and very little effort. You simply mix the cake batter, spread it into your baking dish, and sprinkle a sweet cocoa-sugar mixture over the top. Then, pour hot water over everything and let the oven or air fryer work its magic. It may look unusual before baking, but as it cooks, the sauce sinks to the bottom while the cake rises to the top, creating its own rich chocolate sauce as it bakes.

The result is a wonderfully indulgent dessert with contrasting textures: a tender, brownie-like cake, a slightly crisp cocoa topping, and a warm fudge sauce that pools underneath. INGREDIENTS USED IN HOT FUDGE CAKE

FLOUR

Flour is the main structural ingredient in the cake and provides the foundation for the batter. When mixed with the liquid ingredients and baked, the proteins and starches in flour help the cake set and hold its shape. It gives the cake enough structure to support the rich fudge sauce underneath while still allowing the finished dessert to remain soft and tender. Since this recipe is designed to have a slightly gooey centre, the flour is used in just the right amount to create a cake layer without making the dessert dense or dry.

• COCOA POWDER

Cocoa powder is responsible for the deep chocolate flavour and rich colour of the cake as well as the fudge sauce. Its naturally intense, slightly bitter chocolate notes help balance the sweetness from the sugars and create a more rounded chocolate flavour. Cocoa powder also gives the sauce its characteristic dark, fudgy appearance. Since it is a dry ingredient, it combines with the hot water during baking to help form the rich chocolate sauce that settles beneath the cake.

• CASTER SUGAR

Caster sugar provides sweetness to the cake batter and helps balance the natural bitterness of the cocoa powder. Its fine crystals dissolve easily into the milk and butter, allowing the sweetness to be distributed evenly throughout the batter. Sugar also contributes to the texture of the finished cake by helping it retain moisture, resulting in a softer and more tender crumb. It also encourages gentle browning on the surface as the cake cooks.

• BAKING POWDER

Baking powder acts as the leavening agent in the cake. When heated, it releases carbon dioxide gas, creating small air pockets within the batter and helping the cake rise. This gives the chocolate cake layer a lighter, softer texture and prevents it from becoming overly dense. The amount used is enough to give the cake some lift while still allowing the dessert to retain its rich, brownie-like texture.

• MILK

• BROWN SUGAR

Brown sugar is an important part of the fudge sauce mixture. It provides sweetness while adding a subtle caramel-like depth that works particularly well with chocolate. The moisture naturally present in brown sugar also helps contribute to the thick, rich consistency of the sauce as it cooks. Combined with cocoa powder and hot water, it helps create the glossy, gooey layer of fudge that forms underneath the cake.

• HOT WATER

Hot water is what makes the self-saucing magic happen in this dessert. It is poured directly over the cocoa and sugar mixture without stirring. As the cake bakes, the hot water dissolves the sugars and cocoa powder and combines with them to create a rich chocolate sauce. At the same time, the cake batter rises above it, leaving you with a soft cake layer sitting over a warm pool of fudge sauce. Using hot water is particularly important because it helps the sugar and cocoa dissolve more effectively and allows the sauce to develop while the cake cooks.

TIPS TO MAKE HOT FUDGE CAKE

  1. Use warm milk: Warm milk helps the melted butter incorporate smoothly into the batter and makes it easier to achieve a lump-free consistency.
  2. Do not overmix the batter: Whisk just until the dry and wet ingredients are combined. Overmixing can develop the gluten in the flour and make the cake less tender.
  3. Sift the cocoa powder: Cocoa powder can sometimes form small lumps, so sifting it with the flour and baking powder helps create a smoother batter.
  4. Grease the baking dish well: Grease the entire base and sides of the dish so the cake can be served easily and the fudge sauce doesn’t stick excessively to the edges.
  5. Use the right-sized dish: A 700 ml baking dish works well for this quantity. Avoid using a dish that is too large, as the cake will spread too thin and may overcook before the sauce develops properly.
  6. Don’t mix after adding the hot water: This is the most important step. Once the cocoa-sugar mixture has been sprinkled over the batter, pour the hot water gently over the top and do not stir. The layers need to remain separate so the fudge sauce can form underneath the cake.
  7. Make sure the water is hot: Use freshly boiled or very hot water rather than cold or lukewarm water. The heat helps dissolve the sugar and cocoa mixture and encourages the self-saucing effect.
  8. Pour the water evenly: Pour it gently across the entire surface rather than concentrating it in one spot. This helps the fudge sauce form more evenly underneath the cake.
  9. Don’t overbake: The cake should have a set crust and cooked edges, while the centre can remain slightly soft and jiggly. Overbaking will absorb or dry out the sauce and result in a less gooey dessert.
  10. Check according to your air fryer: Air fryers can vary considerably in how quickly they cook. Start checking around 15 minutes and add a few more minutes if needed.

Ingredients
  • ½ cup flour
  • 2 tbsp cocoa powder
  • 3 tbsp sugar
  • 1 tsp baking powder
  • 6 tbsp milk
  • 2 tbsp butter, melted
  • For the fudge sauce
  • 3 tbsp brown sugar
  • 3 tbsp castor sugar
  • 1 + ½ tbsp cocoa powder
  • ½ cup hot water
Instructions
  1. In a bowl add flour, cocoa powder, baking powder and sugar. Give it a good whisk.
  2. ⁠To this add Warm milk , melted butter and whisk to form a smooth lumpfree batter.
  3. ⁠Transfer the batter into a greased 700ml oval dish.
  4. ⁠In another bowl add in brown sugar, castor sugar and cocoa powder. Mix these together and sprinkle this mixture all over the top of the cake batter.
  5. ⁠Next, boil water and pour it all over the batter in the prepared baking dish. Do not mix in the water.
  6. ⁠Airfry the cake at 160C for 15-20 minutes. The cake forms a crust on top but centre is slightly jiggly.
  7. ⁠Sprinkle some icing sugar on top with an icecream scoop and serve warm.
