INGREDIENTS USED IN STICKY DATE PUDDING
MEDJOOL DATES
Dates are the hero ingredient of this dessert. At the core of sticky date pudding lies the Medjool date, a luscious and plump variety known for its natural sweetness and caramel-like taste. These dates, finely chopped and soaked in hot water, infuse the entire dessert with a rich, indulgent flavor that is both comforting and irresistible.
WATER
Water serves a dual purpose. It not only softens the dates, making them easier to incorporate into the batter, but it also extracts the essence of the dates, creating a flavorful liquid that contributes to the overall moistness and richness of the pudding.
BAKING SODA

BROWN SUGAR

TIPS TO MAKE STICKY DATE PUDDING
- Opt for fresh and high-quality Medjool dates. Their natural sweetness and chewy texture will significantly enhance the flavor and texture of your pudding.
- Allow the chopped dates to soak in hot water for an adequate amount of time. This softens the dates, making them easier to incorporate into the batter and infusing the liquid with their rich flavor.
- Creaming together the butter and sugar is a crucial step. Beat them until light and fluffy, as this aeration contributes to the pudding’s soft and tender crumb.
- Once you add the dry ingredients to the wet ingredients, mix until just combined. Overmixing can lead to a dense and heavy pudding.
- Be attentive when making the toffee sauce. Cook it until it reaches a rich, golden-brown color without burning.

- 6 medjool dates, chopped
- ½ cup water
- ¼ tsp baking soda
- ½ cup brown sugar
- 6 tbsp butter, softened
- 6 tbsp flour
- ¼ tsp cinnamon powder
- Toffee sauce
- ½ cup butter
- ½ cup brown sugar
- ½ cup fresh cream
- ½ tsp vanilla extract
- Process-
- Preheat the oven at 180 degrees Celsius and prepare 700 ml oval glass dish.
- Start by roughly chopping the dates and then add hot water and baking soda in it. Keep this aside.
- In a separate bowl, cream butter and brown sugar until light and pale.
- Fold in the dry ingredients & dates mixture. Combine until smooth.
- Pour the batter in the prepared dish greased with butter and bake it for 25-30 minutes.
- To make the toffee sauce, melt the butter and sugar in a saucepan set over medium heat. When the mixture is simmering, whisk in the cream and bring it to a boil, stirring continuously as it will bubble up vigorously. Make sure the cream is at room temperature, not cold. Add the vanilla extract and mix well.
