TIPS TO KEEP IN MIND WHILE MAKING HOMEMADE POCKY STICKS
- Measure ingredients with precision. Since Pocky dough contains only a few ingredients, even small measurement errors can affect the texture.
- Use room-temperature butter. Softened butter creams more easily with icing sugar, producing a smooth and uniform dough.
- Avoid overmixing the dough. Mix the dough only until the ingredients are combined. Excessive mixing develops more gluten, which can make the biscuit tough instead of light and crisp.
- Chill the dough before shaping. If the dough feels soft or sticky, chill it for 20–30 minutes. Chilled dough is easier to roll thinly, holds its shape better, and reduces the risk of stretching or tearing while cutting.

- ½ cup (113g) salted butter
- ½ cup icing sugar
- ½ tsp vanilla extract
- 1 cup all purpose flour
- ½ cup melted dark chocolate
- In a bowl, cream the butter and icing sugar until pale.
- To this, add in the vanilla extract and all purpose flour.
- Using a spatula, bring the dough together till there are no flour pockets.
- Cover the dough with cling wrap and place in the freezer for 20-30 minutes.
- Once firm, remove the dough and divide it into equal sized strips.
- Roll it on the counter to form a rectangular log shape. Then, place it on a parchment paper and fold it. Using a bench scraper, shape the dough into sticks.
- Place the sticks on a baking tray lined with a silicon mat.
- Bake for 12 minutes at 180 degrees Celsius. Let the biscuits cool completely.
- Transfer the melted dark chocolate into a glass. Dip and coat ⅔ length of the pocky sticks with the chocolate.
- Place it on a tray lined with parchment paper and let the chocolate harden completely.
- Store the pocky sticks in an airtight container for upto a week.
