TIPS TO MAKE THIS HIGH PROTEIN MANGO CHEESECAKE

  • For the base
  • 1 date
  • ¼ cup oats
  • 2 tbsp walnuts
  • For the filling
  • 100g paneer/ cottage cheese
  • ⅓ cup high protein yogurt
  • ⅓ cup mango, cubed
  • 1 tbsp honey
  • For the garnish
  • Chopped pistachios
Instructions
  1. Toast the walnuts and oats on medium heat till fragrant. Let them cool.
  2. Add them in a blender jar along with the date (ensure it is soft; soak in warm water for 5 minutes if it feels tough). Pulse the mixture in short bursts until it resembles coarse, damp sand and holds its shape when you pinch it between your fingers.
  3. Transfer the mixture into a small round dish. Use the back of a spoon to press the crust firmly and evenly into the bottom. Pop it into the fridge to set while you make the filling.
  4. Crumble the paneer directly into your blender jar. Add yogurt, mangoes and honey and blend on high speed for about 1 to 2 minutes until the mixture looks smooth and creamy.
  5. Pour the filling gently over the set base, smoothing out the top surface uniformly.
  6. Garnish with chopped pistachios around the edges and refrigerate for 4-6 hrs.
