Mixing bowls to make the icecream in, a whisk to mix everything together and a spatula to scrape the bowl are essentials for this recipe.
You will also require a piping bag, popsicle moulds and icecream sticks to make the perfect Healthy Pistachio Magnum.
If you’re making your own pistachio paste, you’ll also need a sturdy blender.

TIPS TO KEEP IN MIND WHILE MAKING HEALTHY PISTACHIO MAGNUM
- Use high-quality pistachios. Fresh pistachios create the best flavor and color.
- Whisk thoroughly. A smooth mixture creates creamier frozen bars.
- Avoid excess water from the yoghurt. Too much liquid can create an icy texture. Thicker yoghurt produces a creamier consistency.
- Pistachios taste best when not overly sweetened. Hence, use your sweetener in a controlled proportion.
- Allow enough freezing time for clean texture and structure. A minimum of 7-8 hours or overnight is preferred so that the bars demould cleanly.
- Frozen bars should be coated rapidly to maintain shape. But make sure the chocolate is not too hot otherwise your bars will melt faster.
- After coating the bars in melted chocolate, place them on a parchment paper and let it rest in the freezer for another 10-15 minutes so that the chocolate shell can harden.

- ⅓ cup pistachio paste
- ⅓ cup yoghurt
- 1 tbsp honey
- 1 tbsp milk
- 1 cup dark chocolate, for the chocolate shell
- Add ⅔ cups of good quality pistachios in your blender and blend to a smooth paste.
- Measure ⅓ cup of the pistachio paste and add it to a mixing bowl, followed by the yoghurt, honey and milk.
- Mix everything together till well combined.
- Transfer the mixture to a piping bag and fill in your popsicle moulds. Insert icecream sticks and freeze the bars for 7-8 hours or overnight.
- Melt your dark chocolate in the microwave in 30 second intervals till the chocolate is completely melted. Whisk to remove any lumps.
- Let the chocolate cool slightly and transfer it into a glass for easier dipping.
- Demould your magnum bars and dip them in the melted chocolate, coating them completely.
- Place them on a plate lined with parchment paper and freeze for another 10-15 minutes so the chocolate shell can harden.
